Thanks for the video: We have the sealer, purchased only for bacon. Interesting fact that to use the sealer for cure process too? that you do not need to flip the slab over daily, thanks !! I found out that by turning the bag down before putting the slab into the bag, not getting the end seal part of the bag wet, wiping it down too, you only need one time to pull a vacuum and seal.

I'd think you'd still wan to turn it because gravity will effect the curing liquid. That looks like a good vacuum sealer; I;ve got one, but haven't used it in years.
Another great video i just bought a belly and was wondering if I could get the percentages for the salt maple and or brown sugar and pepper amounts . And Keep up the good work
Because the vacuum pulls the cure into the meat, will it need to cure the full 10 days like in a zipper bag? I thought the time was shorter kinda like the difference of cooking in a slow cooker vs pressure canner? Don't know just asking. xoxo from sunny Arizona. Forecast for today: 73F

we have a different version of the sealer and use it for our apples and pears harvest. What type of apple trees do you have?

It must likely will. But using the equilibrium method you dont have to worry about over curing

You say salt. Do you mean pink salt or celery salt or regular salt?
We are using Himalayan salt. You could use regular salt

Math is so much easier with metric, but I do use the American customary system (aka British imperial system) for most things.
