Chipotle High Protein Aubergine and Black Bean Enchiladas

- I have this either as enchiladas or served with brown rice. Your Choice!
Ingredients:
1 garlic clove, minced
1 tin black beans, drained and rinsed
120g tempeh, crumbled
1 punnet cherry tomatoes, halved
1 aubergine (eggplant), diced
1 tsp ground cinnamon
1 tsp chipotle paste or adobo sauce
200ml passata (tomato sauce)
Serve with brown rice whole or wholemeal wraps (Enchilada style)
Enjoy this delicious and easy-to-make meal!
