Julia, the steak was cooked to perfection, the sauce sounds amazing as I'm a blue cheese lover and the buns! I'm in an apartment so I can't have a barbeque but I'm still going to try this. Yum yum yum 🤤

Skirt steak is sold in various cuts. In Florioda it's sold as inside, outside and flap and they are in fact all different. I was told years ago by a butcher to always purchase outside skirt which I do. Big difference in the toughness between inside and outside skirt steak IMo and I've used both.
This sandwich looks delicious. I don't like bleu cheese however, I would add a little horseradish and a good melting cheese like provolone or Swiss to the sandwich
I have no idea what you're talking about when you said the ingredients in the sauce seem strange. I've only gotten that far in making this and the sauce is GORGEOUS. I was..a little more liberal with the blue cheese than 3oz, though ;)
What I really wanted to know is how Julie deals with the bit of mustard that always sticks in the tablespoon no matter how hard on the bowl you whack it.
I made this tonight and it was delicious. The only problem was that the sauce was very runny and the mayo broke. Not sure why this happened. How do you prevent the sauce from breaking?
To make the *BEST PHILLY STEAKS* you do *need to brown the meat,* but most steaks sandwich *shops in Philly steam their steak,* so most of the time the *best are made at home.*
I'd make it this sauce and then a horseradish sauce and try them both. See if you like blue cheese this way because I imagine you can still taste the blue cheese.
Julia! get rid of that grill brush. I had a bristle brush and one of the bristles got lodged in my throat I had to make a trip to the ER to have it taken out. I'm scarred for life.
Was it the same brand and did you also oil your grill? I know it's been mentioned that the cheap brushes are dangerous for the reason you stated. The oiling of the grill should help remove any wires from the grill. Sorry that happened to you. It's a fear of mine. I've heard about them getting lodged in the stomach and intestines as well.

@@familyocean there’s a fireman who came up with his own design for this reason. Look up safe grill brush and get one of those. I don’t blame you for being afraid but it would be nice if you could enjoy grilling again.
I second the comment on the grill brush. It doesn't matter the quality; there are easy grill cleaning alternatives that don't have the risk of causing hospital stays and intestinal/esophageal injuries, unlike broken-off bristles on brushes.

If you want a little kick but dont like blue cheese try replacing it with a teaspoon of horseradish. Its not overwhelming and gives it just a tiny bite.
Lucky people that can have wheat, dairy! I like beef n horseradish. Not too fuzzy on sauces on meat. But this looks so yummy. I remember plain beef dips , beef piled mile high.
