Waraq Enab, or stuffed grape leaves, is a traditional Middle Eastern dish. Here's a simple recipe:
    Ingredients:
    Grape leaves (fresh or preserved)
    1 cup of rice
    1 medium onion, finely chopped
    2 tomatoes, diced
1/4 cup of fresh parsley, chopped
1/4 cup of fresh mint, chopped
    1/4 cup of olive oil
    Juice of 2 lemons
    Salt and pepper to taste
Optional: ground lamb or beef (about 1/2 pound)
    Instructions:
    - If you're using preserved grape leaves, rinse them well in cold water to remove any excess saltiness. If you're using fresh grape leaves, blanch them in boiling water for a few seconds, then transfer them to cold water to stop the cooking process. Drain and pat them dry.
    - In a mixing bowl, combine the rice, chopped onion, diced tomatoes, parsley, mint, olive oil, lemon juice, salt, and pepper. If you're using ground meat, add it to the mixture as well.
    - Take one grape leaf at a time and place it flat on a clean surface, vein side up. Trim off any tough stems.
    - Place a spoonful of the rice mixture (about 1 tablespoon for smaller leaves, or 2 tablespoons for larger leaves) near the stem end of the grape leaf.
    - Fold the sides of the leaf over the filling, then roll it up tightly into a cylinder shape. Repeat with the remaining grape leaves and filling.
    - Arrange the stuffed grape leaves in a single layer in a large pot. If you have any extra grape leaves, you can place them on the bottom of the pot to prevent sticking.
    - Once all the grape leaves are stuffed and arranged in the pot, pour enough water over them to cover. Place a heatproof plate or a layer of extra grape leaves on top to keep them submerged.
    - Cover the pot and bring the water to a boil over medium heat. Once boiling, reduce the heat to low and let the grape leaves simmer for about 5 hours at low heat
    - Once cooked, remove the stuffed grape leaves from the pot and let them cool slightly before serving. They can be enjoyed warm or at room temperature, with a side of yogurt or a squeeze of lemon juice if desired.
Here's a simple recipe for making Asafiri:
    Ingredients:
    For the Pancake Batter:
    1 cup all-purpose flour
    1 tablespoon sugar
    1 teaspoon baking powder
    Pinch of salt
    1 cup milk
    1 egg
    1 tablespoon melted butter
    For the Syrup:
    1 cup sugar
    1/2 cup water
    1 tablespoon lemon juice
1 teaspoon rose water or orange blossom water (optional)
    Instructions:
Start by making the pancake batter. In a mixing bowl, combine the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the milk, egg, and melted butter.
Gradually pour the wet ingredients into the dry ingredients, whisking continuously until you have a smooth batter. Let the batter rest for about 10 minutes.
While the batter is resting, prepare the cream filling. In a chilled mixing bowl, whip the heavy cream until it begins to thicken. Add the powdered sugar and vanilla extract, and continue whipping until stiff peaks form. Transfer the whipped cream to a piping bag fitted with a small round tip.
Heat a non-stick skillet or griddle over medium heat. Lightly grease the skillet with butter or oil.
Pour small amounts of the batter onto the skillet to form small pancakes, about 3 inches in diameter. Cook until bubbles form on the surface and the edges begin to dry, about 2-3 minutes. Only from one side, remove from the skillet and let them cool slightly.
Once the pancakes have cooled, pipe the cream cheese onto one pancake.
To make the syrup, combine the sugar, water, and lemon juice in a saucepan. Bring to a boil over medium heat, stirring until the sugar dissolves. Reduce the heat to low and let the syrup simmer for about 5 minutes until slightly thickened. Remove from heat and stir in the rose water or orange blossom water if using.
Drizzle the warm syrup over the assembled Asafiri.
Serve the Asafiri sweets immediately while still warm. Enjoy the creamy goodness of these delightful Arabic treats!
