    I'm a Chinese-American who grew up in the Bronx. I've been cooking throughout my 20's but mostly Asian food to reconnect with my heritage. Your channel is really inspiring me to connect with my other heritage: NYC. I'm still a bit hesitant to pull the trigger on pizza gear but I'm slowly losing discipline haha.

      Not trying to be that ass, but americanized "asian" food is not the same as xianxi cuisine, or thai, or japanese(kanto vs hokaido etc).

      Lol Pull the trigger! Go for it. I say that because I have a ton of Asian, specifically Chinese, cooking gear. Now, I'm professionally trained, but Chinese has been my passion for 40 years. It's ok to have another passion, especially if it's pizza!!! Go for it.

    Wow! This is REALLY, REALLY an authentic recipe for New York Style Sicilian pizza. I purchased the same yeast and also the Lloyd's pizza pan referenced I. The recipe. Wow!!! I let it rise in the fridgerator 3 days and followed the steps exactly. I couldn't believe how delicious this pizza baked on my first try. Thank you Sip & Feast. I'm living on fixed income and can't afford to spend $23 for this pie from my local pizzeria. Now I can make my own at a fraction of the cost and it's DELICIOUS!!! THANK YOU!!! Perfect recipe!

    I'm from Brooklyn New York. I always used to watch them make pizza in the pizza stores.This is exactly how they do it. And this is how I make mine too. I have 2 old enamel broiler trays that I make the pizza in. It comes out great! Thanks for letting me know I'm doing it right! Liked and subscribed!

      It's far from the way they do it in any pizza parlor in New York I've worked in a piece of parlor I've made plenty of Sicilian pies

    I really appreciate that your videos are so direct, practical, informative, and unpretentious. There's no wading through eighteen minutes of UA-cam fluff before getting biting right into the instructional stuff. That old-school New York pizzeria flavor definitely informs your production style and I dig it. I'd love to see a video about making New Jersey tomato pie or New Haven-style pizza if you're ever into it. Thanks!

    I love your channel! Every video takes me back to childhood in NY/NJ. My family is Italian on both sides; Siciliani, Napoletani and Pugliesi. I could be watching my relatives cook with every move you make and every ingredient you use. Like Jason, I'm in WA now for many years and the most reliable way to get your style in Seattle is to make it yourself. Watching your videos jogs my memory enough to keep that going one meal at a time. I would not be surprised if we are distant cugini! Haha! Seriously, thank you SO much. With the pandemic stifling travel, you help cure my homesick heart. 👍❤🙏

      Italian food is nostalgic and comforting even to non Italians living in other cultures. It has that quality where it feels like home even to others have never experienced it in their childhood.

    I'm from NJ, but living in Chicago, where there's lots of places attempting the classic NY pizza, and coming close, but a real Sicilian slice is rare. It's usually 'Detroit style', which is fluffier, breadier but still with a good crunchy crust. The Jet's Pizza chain out here is an example.

Your presentation is informative, simple and you're editing is very good in my opinion. To be honest before watching your videos I had no inspiration to cook meatballs, pizzas or calzones however your videos have inspired me to do so.

    I just made this tonight. And yes, I’m a jersey girl. This is the best pizza I’ve ever made. The crust was so crispy. Absolutely delicious

    Used a roasting pan as thats all I had, just knockout all around. Amazed myself at how good this turned out. Followed pretty much exactly, but used 3t yeast and bloomed it with the sugar and warm water as it was a year expired and not instant. Used wegmans moz which was really good, and a lot cheaper than the name brands. Baked in a bottom of the line oven at 450 for 13min first, then cheese/tomato, then 13 min then added the spices and asiago and broiled until a bit brown. Crust was perfect, very crispy on the bottom, I would suggest others use deep dish roast pans if you have one.

    I made this yesterday, and I am blown away with the results. I wish I could upload a picture of the pizza I made. Over the years I have tried many times to make a Sicilian pie and the results were always horrible. People always remark about my cooking skills, but I could not master this. Your video educated me and helped me get the understanding I needed to be successful. The rise was beautiful, and the crust (bottom) crunched when I cut it. Thank you for your attention to detail as you are an excellent teacher. Your demeanor makes it enjoyable to watch and the background music is perfect (not overwhelming). I see a hit tv show here. I wish you the best and all the sucess.....Thank you!

I went through over 100 pounds of bread flour making these recipes. I ate and gave a lot of pizza away lol.     Thank you for the laid-back approach in your tutorials. I love how you teach and how you take the "crisis" out of what should be an enjoyable "family affair". I started with your Sicilian pan pizza because it the style I grew up with in our Chicago Italian neighborhood at Halsted & Taylor streets. I tried many online recipes, but never got the same quality results I get from your dough. Now, my wife just bought me an outdoor pizza oven that can reach 700 degrees F. and I'm looking forward to trying it with your NY style pizza.

    German decent here from Westchester County so naturally all of my friends were Italian. Now in Los Angeles, this looks just like the Sicilian pizza that Sylvio at Rose Hill Pizza would make,

    This vid was great! I will add a few tips and tricks that I've learned over the years. Instant yeast is ok, but I like to make sure that my yeast is alive and well so I use active dry yeast. I test it with warm water and a bit of sugar, if it blooms then I use that water for the dough. The dough will rise and you can use it that same day, but you can also do a cold rise and wait 24-72 hrs if you'd like. Me personally, I don't like waiting but it's worth it when you do. Also, I like to add a pinch of sugar, oregano, and olive oil to my sauce along with the salt. It adds a deeper flavor to the finished product. Follow the rest of the recipe as stated. Again this is personally what I do differently but at the end of the day, it's preference. Thanks Sip and Feast for sharing your method!! Cheers everyone!

    Man, I love your videos. Just kinda winged it with this recipe as the foundation last night after a 4 day cold ferment on the dough... and maaaaaaaan, it was heavenly. And my kids ate the whole thing, *CRUST* AND ALL! :) Thanks for the videos and keep up the great work!

    Beautiful, ex New York Born Brookklyn raised Long Island. i'm a private chef here and was just happen to think back in the days when I was younger we used to go to spumoni Garden and Brooklyn
    I've had an eight year PBS cooking show that ended in 2008 and just wanted to let you know I thought the way you explained things, showed, and with the camera off fantastic
    I had times two different is double zero flower dough, which is very soft and makes this type of pizza even more light.
    Thank you again for putting this video up. I'm now following your channel and look forward to other things that you do.

    That looks amazing and reminds me of an Italian deli just outside of Boston that would always have a tray of Sicilian slices that they would sell at the register as you checked out. And trust me no one left without one. Love your channel, keep up the amazing content.Go Sox!

      GO SOX!!! My family have been fans for 100+ years. My great grandmother rarely missed a game on the radio. I married a Dodgers family, they had season tickets for 4 decades and my mother-in-law became friends with Sandy Koufax through charity events. This pizza and a Sox win sounds like a great combo.....

    We do Sunday dinners with the family. I made two grandma pies last week. Everyone was a little surprised I could make pizza from scratch. My wife’s family is Irish German and I’m polish American Mut. Pizza went over great. Thanks

    Just finished this recipe and it was excellent….thanks for the tip on the pan too as it was key. I pretty much followed your recipe to a T. I made the dough one day prior and cold fermented. I highly recommend!

    Oh man! I grew up in Hudson county NJ, right across the river from Manhattan in the 80s and 90s-when you could get a slice and a Coke for $1.50. All up and down Bergenline Avenue there were countless pizzerias, and while they all made classic NY-style pizza, only few made Sicilians. These were my absolute favorite and I always asked for the corners. Now I live on the West Coast and people who didn't grow up in the tri-state area have never heard of it. I am absolutely making some dough this week and letting it sit in the fridge until Friday night. Thank you for honoring some of the classic food I grew up eating. While I'm not Italian-American, I have incredible memories and love for it.

    Thank you so very much for all the effort and time you put into making these videos available to us home cooks, I deeply appreciate it. If you’re looking for suggestions I’d love to see you cook veal scallopini and filled pasta (ravioli, agnolotti, tortellini, tortelloni, cappelletti, etc.). I’d particularly love to see filled pasta filled with anything but spinach and ricotta or seafood since that’s all anyone tends to make. I’m easy though, I love everything you make videos about and I can’t thank you enough. I’m starting my Sicilian Pizza dough right now (going for 72 hour dough). 🙏💕

    made this last night with different toppings used a 9X13 William Sanoma pan this pan was a lil too small for 497grams of flour it came out very thick(2+ inches) and fluffy (around 30 hour ferment ) tasted awesome . thanks

    Hey Jim, love your stuff man, you are phenomenal! Got a quick question, after you par bake the dough, do you let it cool off before you start adding the cheese or do you add the cheese while the dough is hot? The reason I ask is because in the video, when you took it out of the oven after the par bake it was steaming, when you put the cheese on it looked like it had cooled significantly. Let me know Jim, keep up the good work.

      You can do it either way. Many pizzerias will parbake and just let it sit until they need to make a pie. Thanks for the comment - really appreciate it.

    Hi. My family is from Sicily. Our pizza never had mozzarella cheese. The toppings were the simple tomato, onions and anchovies. Then the parmigiana sprinkle cheese. I’m excited to try your NY Sicilian! Thank you!

    I've only been to New York once but had pizza several times in the week I was there. It was always the thin classic crust. I've seen a few of your video's and am getting a feel for the tradition and love that people have in the region for pizza. It is really great to see. Cheers.

    Wow. I am a Brooklynite (Canarsie/Flatbush/Carrol Gardens) native. Went to NYU and then taught there. I am currently being held hostage in Montana and I want to cry every day missing my food.     I am a Floridian from a New York Sicilian family and here's a funny story for you. In the south Florida pizza places during my childhood, I only saw Neapolitan pizza (not a surprise, I'm sure). My first exposure to Sicilian pizza was in my Junior High School cafeteria. Pizza day was always Sicilian. Now I'm sure that the Jr High School cafeteria pizza was garbage compared to what you were used to in the NYC area but we sure ate it up! 😆

    This was really helpful. I grew up in NJ, but live in Hawaii so you can imagine the lack of reasonable pizza. Did my 2nd attempt at a Sicillian pie and it turned out really well using some of these tips. Par-baking made a world of difference to get the crust right.

    I've made this pizza like 6 times. It really does nail it for me. A good sicilian pie is so hard to find. It's so much better than most places.

    I lived in Northern Italy and Sicily when in the military. Sicilians definitely cook better than the North Italians. I feel like I am watching how to cook pizza like a Sicilian.LOL! Bravo to a cooking channel very well done!

      I hope you got to eat a lot of good food while in Italy! I'm most familiar with southern Italian cooking. Hard to find too many restaurants in the New York metro area that serve exclusively northern Italian food. Everybody here wants red sauce lol. I do plan to research and make some northern Italian food next year. Thanks for liking the channel.

    June 4,2023. Just watched this and it brings back childhood memories. I've lived in the Greater New Haven area all of my 75 years and this looks great. I would love to see you do New Haven pizza, or Apizza.
    I love your pronunciations of mozzarella and ricotta.

    That looks awesome. Not sure you need that background music though. At one point you say (as music softens), "listen to that crunch". Then the music loudens as you cut into the pie, lol.

    Never had this kinda pizza before, so I don't have a frame of reference. I live in Commiefornia and only had chain pizzas. I made this tonight. OMG... the "deep dish" pizzas I've had before all had soggy crusts (gross), but YOUR pizza I had tonight? OFF THE CHARTS crunchy! Thank you so much, bro! Your channel is a game changer for me!

    My Italian roots are from South West of Boston, but Sicilian and Neapolitan are my old county Italian roots. It’s why I love the San Marzano so much, it’s literally in my DNA!

    I’m Scottish and remember my dad making Sicilian pizza in the 1970s. We just called it pizza as the only pizza that was available to buy in Scotland at that time, was a fried disc from the chippy (chip shop). Dad used to put anchovies on his pizzas, and he used grated cheddar cheese and dedicated Parmesan because no one had even heard of mozzarella! How times have changed.

    I grew up in Westchester county, about 20 mins from the city. I moved to MA a year ago, and have yet to have good pizza, the best pizza i've had in this state is dominos, and I've tried many places.
    Seeing a few of your videos has now inspired me to buy a pizza stone and a tray, because Im sick and tired of eating garbage pizza. I'll never forget how the grandma slice tasted in front street pizza in brooklyn(better than grimaldis) or how amazing a simple dollar slice can be in the bronx, with the cornmeal baked in the bottom of the slice. Unreal

    I can't believe how smooth you are with your recipes. Andy the cook doesn't even say what is in ingredients. With any cooking knowledge we can figure it out. You have done these sonoften it just happens without trying. Your so is such a gentleman Sir. If theirs special Italian ingredients is great info. Great job with your son. never let him change.
