Recipe: You will need 3 things...
    Batter:
    1 cup milk
    1 cup buttermilk
    2 eggs
    Whisk together / set aside
    Breading:
    2 cups flour
    2 tsp. salt
    2 tsp. cayenne pepper
    2 tsp. paprika
    1 tsp black pepper
    1/2 tsp. dry oregano
    1/4 tsp. thyme
    1/4 tsp. cumin
    Mix well / set aside
    Dipping Sauce:
    1/2 cup mayonnaise
    1 tbsp. ketchup
2 tbsp. horseradish sauce (cream style)
    1/2 tsp. paprika
    1/4 tsp. salt
    1/8 tsp dry oregano
    1/4 tsp. black pepper
    (Pinch of cayenne pepper)
Mix well and put in the frig until onions are done!
Start with a large sweet onion!
Cut off 1/2 inch of the top (not the root end)
In the center cut a 1 & 1/4 inch core out about
    2/3 of the way down.
It is "not that important" to take the core out at this time
but you do need that 1 & 1/4 inch circle cut to free up the
pedals when you cut them! ... be careful!
Then on the bottom of the onion lightly trim off the roots
    but just lightly!
Turn the onion with the root side up on the table and start
your cut about 1/2 inch away from the root and all the way
down to the table. Start with 4 cuts opposite of each other
like a X ... then cut in between each cut... continue until you
have 16 cuts! All cuts need to be 1/2 inch away from that root!
Turn the onion over and gently spread the pedals!
    Prepare:
Take the onion, now open, and dip it in your batter
and shake off the excess, then put it in the breading
and try to get as much breading in between each pedal.
Shake off the bread and put it back in the batter one more
time, then back in the batter. It's called double dipping!
Shake off the extra batter and put it on a plate and try to
fan out the pedals a bit more, then put it in the freezer for
15 minutes! Then bring it out to cook.
    Cooking:
In a large pot put about 3 to 4 inches of oil. No more than
2/3 of the depth of the pot so oil doesn't boil over when you
put the onion in. Heat the oil to 350 degrees.
Lower the onion in slowly. Cook it for 10 minutes.
It will start floating after 5 minutes but "do not" take it out
of the oil until 10 minutes is up!
Put the onion on a paper towel for 5 minutes to drain.
Serve with the dipping sauce you have in the frig!
You can do the same process with just loose onion pedals!
See video on how to cut them up! Hope you enjoy this!

I honestly have spent half my afternoon today strolling thru Pinterest looking for the perfect blooming onion recipe. I used to have the blooming onion contraption that cut and core. With my 2 house moves I can't find it or Im not looking in the spot that it's at. I decided to look on UA-cam and see what is out there in the name of Bloomin' recipes. I am one of Steve Halls biggest longtime fans and I almost cried seeing he did this video. Why oh why did I waste my afternoon and not just go to Shotgun Red in the 1st place. Lesson learned !!!! Thank you Steve for making this recipe and sharing it with us showing how easy it can be with wonderful results !!! Thank u Sheila and JenJen for keeping Steve's recipe videos going for us to learn and enjoy the art of cooking !! RIP Mr.Hall.
    U are missed !

I actually was a prep cook at a pub that made these and I had to make the bloomin onions. I didn't make the batter but I can say that the wet batter was more of a thick beer batter than just milk and eggs. It was like a thick pancake batter and it was bright orange. Then you had your dry batter of seasoned flour. It went wet, dry, wet and then when we put them in the fryer you put it in there petal side down and you had to give it a good spin. Then you flipped it over after it cooked for a few minutes. It was kind of like your beer batter batter but much thicker more like a cake batter consistency. Of coarse we had the fancy onion press cutter but I like the way you show how to cut it. Just figured I'd put it out there in case you wanna make another recipe with an actual batter like they did at the pub and grill. I don't think it was actually a beer batter though but it was LIKE a beer batter.

Hello, just learning to cook (66 yrs old) I'm doing a lot of deep frying. I absolutely love your beer battered rings and so does my family. Questions: 1) why not just use the beer batter recipe and technique on this blooming onion? 2) what does putting the beer battered onion rings in ice / salt water accomplish? 3) why put blooming onion in freezer? Thanks ahead !!

I've found it's easier to put the cut onion on a plate then put the flour on it from the top. Dip it in the egg batter then put it back on the plate and dump the flour on from the top and work it in. Lift it up and dump excess off. Then in the oil. It opens on the plate better and you can get the flour mix in easier no matter what sequence you choose to batter it.
