IMO, the PBC probably does ribs with best flavor outcome due to direct pit flavor. This unit is so simple but is a powerhouse. Loved the video Troy. I feel like I'll eventually end up with one. (along with everyone else) lol

Seeing that reaction never gets old. My 2 and a half year old has a similar response, he gets all jumpy with sauce smeared from left to right on his cheeks! I want to see that reaction tonight from my family so I need to run and get a few rack to start for dinner! My German Shepard would tear up those bottom ribs and love you for life!

I had to chuckle a little bit when you were cutting up the ribs at the end and either Fifi or Lucy magically appears to circle around the kitchen island in mouth watering anticipation ! I'm sure the other dog was nearby ! My dog Rusty does the exact same thing.....it drives him nuts ! You may or may not find BBQ sauce on my floor, but you will always find dog drool ! LOL

PBC babybacks are in HIGH demand around here lately, especially after eclipse weekend. I'll be hanging 6 racks in a couple of weeks, to keep everyone happy at an event we're having out on the "scary farm". But after watching this video, I'm compelled to hang a couple racks right now!!!

We're a big fan of the Oakridge rubs. When hanging, I've had the issue where the bottom (near the charcoal) gets done quicker than the rest of the rack. When I foil them half way through the cook and then place on the rack, no issue. Nice lookng ribs Troy.

Great video, I've been using my 22 WSM, with the hanging attachment, and love doing ribs on it. It's hard to believe how much better they are turning out compared to using the rack and water pan method. Thanks again for the video!!

Ha!!!! I'm with ya Meathead. For my cooking vids, I use a Canon G30 which Canon recently upgraded to a G40, but it's the same camera that I have. I also shoot at 60 fps. For my Thursday Chats, I use a Canon XF305.
T-ROY COOKS I shoot at 1080p 60 FPS as well.... I think... lol. But yours seems so much clearer. Thanks for the info.

Why not use those clamshell-hinged wire meshes for a campfire. Can hang it vertically off the rack, and the ribs can have their full hang time - without worrying about meat falling off the bone.
What’s up Troy! Hope your doing good and by the way your cooking looks like your doing fine. Don’t you just love that PBC. I used mine a couple of weeks ago, I cooked 7 racks of babybacks half seasoned with dizzy dust and the other half with Montreal steak seasoning. The steak seasoning were a big hit with some Stubbs BBQ sauce. Always look forward to your videos buddy, keep on cooking!!

Ribs looked great. So what's a good eternal temperature for ribs? I don't want fall off the bone tender. I like them tender but I like to be able to bite into the rib without the bone pulling out. Looks like that's how your baby backs were cooked.

Curious how this runs in the winter time since it's not really a dial in cooker. I'm a texan like you so I'm not looking at brutal winters but it can get pretty cold in west texas during the winter

I'm a beginner at smoking BBQ, I use my Weber kettle as a smoker, works great, but I need more cooking space, do you recommend the pbc for me ?
I thought the black ops brisket rub was a bit to salty for me. What's your opinion on this one as far as salt???
If you see any Warpig F.U.B.A.R. (For Use on Butts And Ribs) bbq sauce at HEB I HIGHLY recommend buying a bottle. Very good sauce and a portion of your purchase goes to helping our vets.
I've made them twice on my Pitbarell cooker and felt they were over cooked both times. First time was 2 and half hours and second time was 2 hours. Second time was a bit better though. You have any suggestions?

Excellent video, subscribed. I just got a PBC about two weeks ago and want to try some ribs on it, this video was perfect. I noticed you didn't do the tin foil wrap, is it a preference of yours to go naked? (the tin foil that is) I have a Masterbuilt electric smoker also, the hardest thing with the PBC is not having a thermometer so I will likely use my probe to make sure it doesn't get too hot. My first test run on the PBC had it at 400 degrees....yikes!
Hey Brett, I'd say you need to close down your intake vent just a bit to run cooler. I do not like wrapping my ribs usually. The PBC is a great cooker and I'm sure you will be using yours a lot after you get the hang of it!! Thanks for watching brother!!! Cheers, Troy
