I love a good squash casserole. My mom made one with zucchini (and yellow squash on occasion). It included onions, grated carrots,cream of chicken soup, and stuffing mix. All those seasonings!! Yummy!!
Yum!! We had raspberries on sale a few weeks ago, so I put it in my Vinegarette mixture and used my emulsifier to blend it up, and YUM!!! The peaches went on sale, so I made a salad with romaine, feta, grilled peaches, and Raspberry Vinegarette. I love your squash recipe, I make a Brussels sprout one, but with a buttered panko garlic parmesan topping. I also made your egg casserole the other day because the hams were on sale, so I diced up a bunch, sauteed it and added leftover broccoli, leftover red potatoes, bacon and everything else, plus took some canned flaky biscuits, peeled layers off and layed on top, brushed with garlicky butter. I just love that recipe of yours because I have made it so many different ways. My kids use to call me the "Clean the refrigerator out chef", ha ha ha!!!
Squash casserole is so southern and one of my favorite comfort foods. I make it in place of (southern American style) mac and cheese in the summer and I honestly prefer it. Mine is much simpler than yours. I don’t make a bechamel sauce, instead I just add pats of butter, a couple of whipped eggs and some extra crushed ritz crackers. I plan to try yours with the bechamel though.
The casserole looks delicious. It is perfect for when your garden decides to go crazy with squash. The vinagerette looks delish too. I will defintely try this meal.
I made this tonight for dinner!!! I actually swapped out the béchamel for just some crema and I served it with rice! We all agreed that it tasted like grits and bacon (a family breakfast favorite), which is odd, since there is no corn in this recipe! 😅 But we loved it !!! So delicious and different! This reminds me of a thing my friend and I used to make after school. We would simmer diced zucchini, then drain and add crushed saltines, butter and a little milk, and mash. Looked awful but tasted marvelous!
This would also be delicious with a slice of ham! Your use of the Ritz cracker crumbs with cheese and bacon fat is genius! I would have never thought of that! Awesome!❤️

This is a great alternative to how I use squash. We slice them up, slice and onion and Hungarian hot peppers. Mix in a bowl, add corn meal to coat and some flour the fry in a skillet. This is how my mother taught me to cook squash!

I have the yellow squash at least 3 times a week I don't eat normal food i also eat every day Cucumber's cut in small cube, green onions, and cherry tomatoes with oil and red wine vinegar at least twice a day it's to hot to turn on the oven in Arizona.
