Gelato is slightly creamier, and served at a warmer temperature than ice cream (authentically). It contains more milk than it does cream, therefore it contains less fat than ice cream. But it is higher in sugar. Gelato also doesn't contain egg yolks. The churning process is different as well; gelato is churned more slowly and not as hard as ice cream. I worked in a gelato shop when I was like 16 and people asked me the difference 500 times a day lol
