    Hello! Great looking pastries! Can I freeze the shaped unbaked cookies if I decide not to bake them right away? Thank you very much for the recipe..and demo!

      I haven't tried freezing them unbaked. So I wouldn't recommend it as I think the moisture when freezing might miss up the final texture when unthawed.

      Taboon Bakery ....ok, thank you. I want to make sure because the recipe will make A LOT of cookies! And with all that butter, 🤑I will have to hide some from myself so that I don't end up looking like "humpty"! dumpty

      Hahah. I think it is better to make half or one third of this quantity then. So you can eat them fresh. I hope you'll enjoy them.

    What a beautiful recipe, I bought a pair of these molds in a flea market but I did not know for what use, I just like them, now I see, I'm not sure if I'm going to try it because I live in Mexico and I don't know what semolina is and how can I get it?. Thanks for sharing.

      Oh. That is very nice. This is semolina. en.wikipedia.org/wiki/Semolina
      I think it is sémola in Spanish.

      Yes. substitute the amount of water with milk.

      As per the recipe around 3 cups of lukewarm milk instead of water. But I would say start with 2, 1/2 cups and gradually add if it needs more.

      You need to ask in Middle Eastern shops (i.e Turkish, Arabic, Palestinian, etc)

      You can use milk instead of water when making the dough on
      the next day.

      Use normal milk instead of the water and milk powder.

    Asalamu alaikum need some help! I followed the recipe and I made a few to taste, they turned out incredibly dry! Now I have a huge tub of dough and don't know how to correct this!
    I did actually use ghee instead of butter in the initial step of mixing the semolina. Could I add more butter or ghee to give it some moisture?

      Thank you sister. Using ghee instead of butter is usually better. Now if you have added the water and yeast then there is nothing much you can do. But if not. I would suggest adjusting the amount of butter/ghee, as some semolina is drier than other.

      In the dough granulated sugar is fine. To dust the baked cookies use powdered sugar.

    Since you put yeast, why do you add baking powder?

      You can skip the baking powder. But the recipe that my mum taught me adds both.

    what happens if I don't set the dough mixture set aside for some hours? I just made this mistake of preparing the full dough in one go without letting it rest

      Tell me what happened? I think letting it rest before making the dough will make the final results softer and more melting in your mouth. As the butter will soak more into the semolina.

      Yes you can. or you can divide into half butter half ghee which i usually do.

    the biscuit is so tasty but the thing is this is the only biscuit I come across that has hige amount of butter or whatever. its not good for health

      It is. It is a traditional recipe. You just eat one or two and you should be fine.

    This recipe will make at least 100+ cookies! If you only need 2 dozen cookies or so, look for another Maamoul video/recipe.

      Thanks for the information. You can always cut the recipe in half. You'll find most Arab families when they make this mamool for eid celebrations they'll make at least 1 kilo.
