  • SPAGHETTI SQUASH SALAD
    1 medium spaghetti squash
    2 cups diced tomatoes
    2 cups broccoli floret’s
    1 cup diced cucumber
    2 cups diced bell peppers
    1 cup finely diced yellow onion
    1/4 cup olive oil vinaigrette dressing
    ¼ cup grated Parmesan Cheese
    Cut the spaghetti squash in half, length-wise and steam or bake until tender (@ 20 minutes. Scoop out the strands of squash while still warm. Let the squash cool.
    Add the remaining vegetables and mix to distribute them. Dress the salad with vinaigrette and sprinkle with grated cheese before serving.
