Recipe: Swedish saffron buns

- Now is your chance to bake the most delicious saffron buns for Christmas. Just follow the recipe by cookbook writer and blogger Fredrik from 'Fredriks Fika'! 👨🍳
Recipe (32 buns):
Ingredients:
1g saffron
1 tsp caster sugar
50g fresh yeast or 14g dry yeast
500g milk
180g caster sugar
1 teaspoon salt
200 g softened butter
840-900 g all purpose flour
Brushing:
1 egg
Raisin
How to:
Grind the saffron with the sugar. Warm the milk to 37 degrees Celsius or 98 degrees Fahrenheit and add the saffron.
Crumble the yeast in a bowl and add the milk.
3. Add sugar, salt, butter and almost all the flour. Work the dough for 10 minutes.
5. Cover the bowl and leave it to rise for 30 minutes.
Knead the dough lightly and divide it into 32 equal parts. Roll out each part and roll together as shown in the video.
7. Place the buns on a sheet of baking paper and cover with a cloth and leave it to rise for 30 minutes.
8. Brush the buns with egg wash and put in raisins.
9. Bake the buns at 220 Celsius or 430 Fahrenheit for 7-8 minutes.
10. Let the buns cool on a wire rack under a cloth.
Yeast: If you use to bake bread or buns, use the same amount yeast that you would use for two cups of liquid. If you use dry yeast, you should heat the milk a couple of degrees warmer, 40 Celsius or 104 Fahrenheit.

I've seen a few other recipe uses cardamom. Is that traditional? I use them in semla but not sure about saffron buns. Last question. should it be fluffy? or slightly denser so I'll use all purpose flour instead to make it abit tougher @@sweden
It should be more towards the fluffy side of life! Yes, Cardamom is used for these lovely buns.

@@sweden Im making them again on Christmas Eve. I literally make 40 and freeze half . Plus I make the lussebulla ones with the almond filling and pearl sugar.

Hello :) How long do you let the dough rise using instant yeast? Also, what is the problem if the dough comes out wrinkly, looking like a brain? Thank you!
It seems the rising time is the same. You want the dough to be smooth for aesthetic reasons.
Respect for saffron buns but Christmas ham is a Christmas ham, especially if you are in the north of Sweden for the holidays 💙🇷🇸🇸🇪
