    Daniel's moms breakdown her summer kimchi recipe! It's a simple recipe for those who have never tried making Kimchi before. Instead of fish sauce, we will work with salted shrimp - which eliminates lot of the pungency of Kimchi. We will also use potatoes (instead of rice paste) to build the base of our Kimchi paste. The potato starch does a great job in harmonizing lot of the sharp flavors.
    The result is a well-balanced Kimchi - full of spice, kick and umami. I can't wait to see your expression when you bite into your first homemade Kimchi.

    Gochugaru never have I seen that much in my life !! Your mum is such a pro 20 years of experience ❤️WOW .you and your mum both have an amazing passion for cooking and her lil useful tips ....the best 👌👌👌

      I always tell my grandma to pack "light" for the states. She usually ends up bringing about 10kg of gochugaru or doenjang. I gain muscles everytrip to Incheon airport haha!

    I made both Mama's summer kimchi and Seoul kimchi 2 days ago! Both are wonderful but I got to say Mama's summer kimchi is something special. It is perfectly balanced, possibly the best I've ever eaten! I ❤ mama n gma! Side note the Seoul kimchi took one day longer to ferment in the same conditions made at the same time.

    I’m sorry. To this day, I’ve made around 7 batches of kimchi, 3-4 different recipes, and this is still my favorite recipe!

    The first time I tasted kimchi, it felt like an awakening of my taste buds. That was 32 years ago in the North Jeolla city of Gunsan. I keep it in my fridge to supplement my diet and always enjoy it with any asian meals I prepare. After viewing this video, I’m going to try to make it myself. Thanks for the lesson.

    “Some modern art” - Danyul you kill me! The videos where you narrate are so great because the way you speak and present make the recipes feel so accessible and relaxed. It also helps that you are a natural comic. I can feel deep down you have a spark of a comedian in you!

    Anyway, I was wondering if you’d consider doing a video on Korean food storage (tupperware, plastic vs glass, ceramics, etc) and what to look for with storing the savory to the pungent banchan & different types of kimchi. I have some tupperware that is only designated for pickles & kimchi because the smells totally ingrained into the lids and I can’t get that smell out! - Thanks for your videos and big hugs to your mother and grandmother for being such great sports!

    I've never tried making kimchi but, I love napa cabbage and spicy food. Your mom's recipe looks easier than others I've seen. I will challenge myself to make it.

    My favorite is when you crunch into the white part of the leaves and you get a fizzy burst. Can you do white radish kimchi next, please!?

      Yes, using the salted shrimp is quite nice. Reduces the pungency and overall fishiness taste - I think i prefer it to fish sauce now. 🤓

    After “working” so hard to get through all of the kimchi at home - I made a double and triple batch of two different recipes which were NOT meant for one person - I was enjoying my “break” & making jjigae with store bought aged & fermented kimchi. This recipe looks wonderful & reasonably portioned so it’s not a marathon of preparation! Poor guy should’ve KNOWN his mom was going to knock it out of the park! She made at least some of the kimchi he grew up on, right?

    Getting the salt right was my largest challenge *FOR YEARS!*
    And then I heard about _making water a bit more salty then sea water, and soaking the napa cabbage pieces for around 10 to 16 hours (until it passes the 'bend test')._ Then I simply taste the cabbage to decide how much rinsing it needs. (usually a couple times) Then I'll simply let it drain for a few hours before combining everything!
    *I admit this works best for **_'mak'_** (pre-chopped) kimchi, and if you do a traditional (roll) like your mom, her technique is better.*
    *I LOVE KOREAN FOOD!* ❤

    Wow! Thank you for the tips. Love seeing you cook with your grandma & mom and sharing their recipes! I've never seen or made kimchi with potatoes before--would love to try that next! I'm just finishing up my last batch from October (cooking soondubu jjiggae) and must make more 😋

    I remember my grandma making her kimchi with only salt and whole chili pepper (not powder) and maybe garlic cloves added (but I don't remember seeing them either). It's NOT ready to eat right away, takes few weeks? months? to naturally ferment. I've never seen her put any fancy stuff like radish, green onions, potato, pear, apples, gluten, sugar or any of that sort. Is this like the modern trend new kimchi making recipes?
    Her kimchi wasn't very spicy and mildly red compared to other Korean grandmas I knew and not all that really really red kinds you see everywhere with powdered chili kimchi. Maybe her kimchi recipe not the more popular "standard" kind of kimchi, I think here might have been variety of "white kimchi"? But she was born 1904 from outer province near Seoul so I think her recipe was old school :P
    Wonder anybody else (esp. Koreans) heard/know the kimchi recipe like my grandma's? Just curious to know

      Hmmm, that does sound more like white kimchi. It'd be the perfect recipe for when you don't have much in the pantry, that is if you make it in advance, so you won't have to go kimchi-less for a whole month!

    The potato really works like magic! I live in Singapore (always summer) and the kimchi with potato really tastes much better than the one I made with rice! Mom's wisdom rocks!

    i made your mom's recipe today (ive been making kimchi for my own consumption everyday), and this recipe is by far the BEST. usually i just use all purpose flour or glutinous rice flour , but Potato base is really goooood!!!! also, i used our native Filipino shrimp paste instead of korea's saeu-jot (yes, i am a pure blooded Filipino-Philippines). please tell your mom her recipe is better that maangchi(no hate,sorry)

The shrimp at my country they called it cincalok better option than fish sauce I hate the smell and saltiness.

    I have never used potato in my Kimchi, I have 1/2 head of Kimchi left, shouldn’t last long the way I eat it. Wife hates it, but I sooo love the taste. i will try your families recipe. I usually do two to three heads of Napa when I make it, some I let really sour for soups, cant beat the taste. Thanks for sharing.

    These videos with your family are lovely - i started cooking with my grandma and my mother from an early age, and my memories are priceless. I have become now something of a kimchi addict and i used in my last try apple, but not potato so this was quite interesting. I am substituting shrimp with soy sauce, to avoid using animal products and still i loved the taste. Thank you for the lovely recipes you always brighten my day :)

    Gotta make this now. I assume it’s because of quarantine, but my asian market is constantly out of already made kimchi lately. but they keep the napa cabbage in stock, so i guess i’m gonna have to make my own, because i am jonesing for some kimchi.

    wow this looks so good! and using potatoes instead of the glutinous rice flour is a good idea! I made kimchi for the first time last week! since I do not eat fish or seafood I used a little bit of soy sauce to replace the fish sauce in the recipe I had. It tastes good but sadly the soy sauce made the gochugaru paste dark brown so it doesn't look very appealing ^^ but I think next time I will just use salt instead and see how it tastes!

      Yea! Just make sure to use Kosher salt. If you nail a recipe down, I'd be curious to know how much salt was required for one head of nappa cabbage. Good luck y4miko!!

    So much fun to cook with family! How do you like cooking in that kitchen compared to home in Korea? That kitchen and dining area are tge size of my entire apartment, hahaha! But that doesn't stop me from cooking every day!

    Thanks for the tibs, will try your mom recipies using potatoes..I usually use glutinous flour to bind the vegetables ..
    I love kimchi it's so healthy ..been doing it since last August 2018. I learned from different u tuber channel. Great to come across your channel.
