Cream & lime juice? Interesting. I would have said follow Emilie and take it into a Mexico direction. Lime, ripe mashed avocado for the creaminess, finely chopped coriander, Serrano chile and onion and let it sit for a while to absorb the flavours.

She should be honoring her family name and respecting the lineage of which she is a newcomer and a novice. As I stated in my initial comment, her job right now is to learn from her father and seize the opportunity to approach mastery picking up whatever knowledge she can. When and if ever she achieves anywhere near the accolades as her dad or her grand-dad, she can maybe play around but that station is earned and she has a way to go yet. In the meantime, it reflects ingratitude to her father, disrespect to her heritage, and frankly just plain ignorance about her own circumstance. Most people in the culinary arts would kill to cook alongside Michel Roux to learn everything possible and she squanders that opportunity by being self-absorbed, self-righteous, and obnoxious. Chef Roux is making genuine attempts to cultivate his daughter's mindfulness about food but she squanders it because she'd rather be a smart ass. Michel Jr. would NEVER talk that way to his father -- at least not on-camera. Who am I to comment? That's where YOU reveal YOUR ignorance. I'm more than qualified to opine.

@@Chilax his parents are French and he was born in United kingdom...If he had a typical French accent, I'd shut and enjoy the show however he has a perfect "English" accent, and than when he says Tar Tar, it sounds like he needs to buy a vowel.....My Italian friends do the same shit when they discuss food....they've never been to Italy in their lives and than you mention a pasta dish and they turn into Mario and Luigi

Why would you take it to Mexico? That's a lot of work, just to piece together some raw meat. I've made this several times, without leaving my kitchen.
