Ive always taken the line from Iri about the heart as a hint she knows about Maiya and Kiritsugu. If you rewatch the balcony scene, Iri tells Kiritsugu he has her and Saber but hesitates when including Maiya. In the next episode her and Maiya are thrown into this situation where they are together, both wanting to protect him from Kirei and she throws out that line. I feel like she fully knows, it naturally bothers her, but she's doing her best to accept it. After all she expects to die in the grail war but wants Kiritsugu to be happy. And in this moment she knows Maiya is as determined to keep him safe as she is. Her thoughts at the end while healing Maiya also tie back into this.

Basically he looks down on knights and any other type of honor.
But he respects magic and puts it on a pedestal. Basically the only honor he cares about is honoring magic.
Wikipedia segments are fun. In Fate I always really love seeing servants I know nothing about and reading up their apparently very famous history.
Also, I believe Iri has a barrier erected over the grounds of their headquarters, so she can detect whenever someone breaches the barrier.
In order to win the grail war, you have to kill the other servants, but servants are powerful and difficult to kill so the more sure fire way to victory is to kill the masters who serve as the mana source for the servants. Without a master, the servants will soon vanish without a mana source. Some can last longer on their own without a master than others due to class skills and whatnot, such as the archer class which has the independent action skill. However, even if you do succeed in killing the servant, it's a good idea to kill the masters too because if there is a master without a servant and another servant without a master then they could still form a new contract with another master/servant so long as their are still unused command spells. For that reason, the church serves as a "neutral" (in theory more so than practice) party that offers safe haven to masters that have lost their servants as they are still a target even with their servants gone.
Btw command spells are extremly important, because they can also be used to make your servant surpass their limits, for example, if they are out of mana, a command spell can make them use an ability even if they have no mana, so it can do thing like that, as long as in the servants posibilty, the command spell can make them do it.
It can also do shit like teleport your servant to you, no matter where they are. I think of them as 3 big mana charges that are use to supercharge your command. That mana can be expended to do something like brute force a servant into obedience, or if they cooperate then it's a big ass buff for them as long as they're doing what the command said.
To expand upon the comment above, another handy use for the command spells can call the servant to your side in an instant even across great distances.

Kirei left Maiya because Saber is not a healer so she would die anyway
i feel like this is best left unsaid since its not like pink is done with the show and asking this. understand character actions requires first understanding the characters.
So Saber somehow doesn’t sense trap with her "definitely not future sight" , and had trouble with 3-rate caster while she dealt with people who could onespell Gilles with ease.
Saber still doesn’t get along with Kiritsugu when they both are nearly identical by description in F/SN.
Normal Saber would kill for such disrespect and go after Caster despite orders.
That’s what I call gun wank , those should be useless against people moving at Mach speeds and dodging lightning - but in zero they just work.
As a matter of fact besides Zero in all other works bullets and guns a magic devices or enchanted guns with some additional nasty effect - no one uses regular guns.

Normally Saber wouldn’t have allowed Lancer to save his master and would have killed him - but unfortunately it’s zero saber.
