Great explanation Lee. Will help many anglers. Can I ask if you riddle the mix as soon as you've added the water or after is settled for 20 minutes or so.

i find my groundbait sticks in the method mould is it too dry or too wet
Too wet usually if it is sticking.
It needs to be dry enough that you can squeeze it hard and it will bind but otherwise fairly dry to the touch.

Sounds like just the sort of thing 99% of anglers want to be spending their Friday and Saturday nights doing. In fact, it's people like you that simply cannot fathom the importance of convenience in every day life. You obviously have loads of spare time on your hands to grind bait by hand, watch videos on UA-cam and then send stupid comments about them. Most people don't have that time and instead work long hours, and spending £3.99 on a bag of So Natural groundbait so they can have day off fishing really doesn't nark them half of as much as every video on UA-cam does you. Do yourself a favour and cheer up you miserable sod.
