The Perfect Pasta alla Puttanesca with Shrimp | Chef Jean-Pierre

  • Hello There Friends, Today I'm going to show you how to make one of my favourite Sauces, a Puttanesca Sauce that I make with Shrimp to give it some more flavour and depth. It is not necessarily the Traditional way of doing it, but I think it's fabulous and I think you will too! Make this dish and let me know what you think in the comments below!

      I'd like to recommend Helen Rennie. She has a marvelous channel and wonderful insights into cooking. I think it would be a lot of fun to see her and Chef Jean-Pierre do some episodes together.

    Chef Jean Pierre does it again with another insider tip. Slice he shrimp lengthwise so that they twist when you sauté them. That way they will hold the sauce better. BRILLIANT!!!! Thank you Chef.

    Chef you have been a Godsend after loosing my friend who passed away on UA-cam, Jack Chaplin of Daddy Jack’s Restaraunt in New London Connecticut. Jack was a great man and great chef like yourself. Thank you for sharing your knowledge and great recipes and making me laugh and sharing your love of cooking with the world!

    There are soooo many excellent chefs on UA-cam and this guy has simply got to be one of the absolute best! Going to Culinary School costs lots of money and gives you a piece of paper but probably no job! LEARN FROM THIS MAN!

    I'm a total addict of chef JP
    The only other two sources i use are Diane Worthington's Cuisine of California and Jennifer Segal's Once Upon a chef
    In every case excelllent and inspiring
    BTW I had the honor of eating in Julia Child's dining room twice during Grad school in Boston. What a large and gracious personality that raised the bar for cooking in America! Just like JP!!!!!!!

    You never talk to much. It adds to understanding and enjoyment. I live in a very high altitude so I’m always adjusting time and temperature. Things seem to cook faster. Through much time experience your dishes are marvelous!

    Puttanesca is one of my favourite pastas to make and eat, yet I'd never thought to add prawns. Mind blown, absolutely can't wait to try this recipe.. with the addition of some chili flakes. Thank you Chef, you're an inspiration. Really nice acknowledgement of Emeril too, you seem a lovely man yourself.

    You've taught me so many things but I think my favorite little bit of info is slicing the shrimp in half. It really does make the texture so much better, plus the smaller piece curled up makes it the perfect bite size. Thank you!

    Puttanesca is an easy go-to meal for me..always have the basics available, including anchovy paste. One of my cookbooks has the story about "ladies of the night." Another fun video, Chef.

    JP, you should trademark cutting those shrimp in half! You are the only one I have ever seen do that and you’ve been doing that for a long time. It really does give a nice look to the dish, or any dish with shrimp. I always remembered that you did that and I do it myself. The other dish I remember is when you took the u-10’s and butterflied and pounded them and then stuffed them. They were breaded and served sliced. Another good dish for the channel!!

    Made this wonderful dish last night for my wife. It was wonderful. I have made the original Puttanesca for many years to great success among my friends. Now I'm looking forward to making this one for guests as well. I had both anchovies in the can and paste in the tube so I used the paste. I also took your advice about the salt. I salted nothing but a tiny sprinkle on the shrimp as I sautéed it. In the end the finished dish required no extra salt by either me or my wife. Thanks for the great idea, and all of your other videos. My wife and I watch them on TV regularly.

    WOW! I just made this today. What an easy and flavorful dish. I made it with angel hair pasta but next time…and yes there is a next time and another and another…I’d make it with thin linguini. Chef thank you for making me look like I know what I’m doing.

    Jean- Pierre, yesterday I cooked this recipe for my family.
    It was delicious and a great success. I de-glaised the shrimps pan with 1/2 marsala + 1/2 sauvignon blanc.
    My wife and I always enjoy watching your videos, they are some of the very best on You Tube.

    You know, as a child I recall my father having "colorful" language when speaking Italian and that word was in there(and he was not referring to tomato sauce!). He expected that the children did not understand, but years later...I figured it out. Thanks Chef. I will make this recipe and I won't be able to resist telling the story of the name.

    Chef, I'd like to thank you from the bottom of my heart. Your videos have completely transformed my cooking. I hate to toot my horn, but I'm an "Amazing" cook now, thanks to you and your videos. I have made more than 40 of your recipes and they all come out fantastic. I just made your choc choc chip cookies. My kids love them. We all love your honey garlic chicken stir fry and I'm making this Putanesca again tonight. and. That's what changed everything for me. "Mise en place" is the key to enjoying cooking. When everything is ready, you can focus on cooking and enjoy it. I used to make myself crazy trying to get everything ready. Another point I've learned from your videos is that there are a "few simple rules" to most cooking. I watch you repeat them and they become second nature. "Onion is always number first". haha. Unless Bacon. I've gotten myself many of the kitchen gadgets that you use, and wow, very helpful. The laser thermometer is a game changer as well as a insta read thermometer. No more guessing. My family loves to watch you too. so entertaining. Thery are eating like royalty now. Mama Mia. Keep up the great content!

      Aren’t they just, some of he’s ingredients are expensive, but the out come looks amazing. I love it when he forgets, and just scoffs it off, he’s very down to earth and can laugh at his self, that’s a great quality in a person.

    I have learnt to pick up my pasta with the tongs and twist it in a ladle.
    It is so much easier to get a neat looking pasta on your plate 😉

      I wish I could remember how to write French as eloquently and elegantly as you did Jean! But after making a concerted effort to master English for the past 50 years my French leaves a lots to be desired! Thank you so much for your lovely comment! 💗

    After watching all of the TV Chefs giving you carved in stone recipes it can be daunting sometimes. Then, along comes Chef JP and his direction of if you don't like it don't put it in because friends we are not putting a man on the moon here, we're cooking. LOL Gotta love him and his teaching methods.

    Nice video ! Every puttanesca from Napoli would have roasted the shrimp first, put them out unfinished, make the souce in the same pan an finish the shrimp in the sauce at the end. All in the same pan. So do i also, cheers from Austria ! 👍👍
