Flourless cake with coffee and chocolate

Ingredient:
• 250 g chocolate with 50% cocoa content
• 100 g of mascarpone with a minimum of 78% fat content, at room temperature. It can also be replaced with greasy butter.
• 7-8 g of ground coffee…
• And about 50 ml of milk. These will be used to make a small cappuccino
• A teaspoon of salt
• Optional 2 tablespoons whiskey cream
• 5 egg whites
• 5 yolks
• 125 g of sugar, some of which may be vanilla sugar
• And 100 g of sugar, some of which may be vanilla sugar
• And 140 g of sugar, some of which may be vanilla sugar
Preheat the oven to 170 degrees Celsius, heat up and down, without fan.
We prepare a 21 cm cake form, with removable walls. Remove the base, turn it upside down, so that you have a perfectly flat surface and the cake can be easily transferred to the plate later. Cover with baking paper, mount the ring, then remove excess paper around the mold.
The walls are greased with melted butter. Let's put it aside.
Let's talk a little about chocolate. In chocolate sweets recipes, especially creamy ones, we must always respect the percentage of cocoa specified in the recipe, because the cocoa content influences the consistency. The more cocoa the chocolate contains, the firmer the consistency will be. The poorer the chocolate in cocoa, the softer the consistency.
Today we use dark chocolate with 50% cocoa. We break it into pieces and put it in a bowl that can be placed in the microwave. Heat in the microwave for 1 minute until slightly softened. If you do not have a microwave, then use the classic bain marie - a bowl mounted on top of a pot of boiling water.
To give the aroma and taste of coffee to our cake we need a 90 ml cappuccino. To prepare it I used the new Breville Prima Latte 2 coffee espresso machine.
Add two tablespoons of whiskey cream. This gives a special aroma. If you do not have, or do not want to use alcohol, then simply omit. You can substitute any other flavors to your liking, such as a vial of rum, vanilla, orange, almond essence and so on.
Pour hot over the chocolate in the bowl and stir until it melts. If necessary, it can be placed in the microwave for another 30 seconds.
Then add 100 g of mascarpone. You can also use greasy butter instead, if you don't have mascarpone. Homogenize well.
We add a teaspoon of salt, very important for a balanced taste.
In a large enough bowl, put the 5 egg whites and start frothing them with a hand mixer, at high speed, until it gains a lot of volume. Then gradually add the sugar. As soon as the sugar has incorporated, we stop mixing.
Combine the chocolate cream with the yolks. Then we take a third of the egg whites and mix them in this cream. This first third of the egg whites can be incorporated faster, without any special care, because it is only meant to make the cream softer.
The other two thirds are incorporated as in pandispan, easily, by wrapping, in order to keep as much of the air incorporated by the whites as possible. This is how we loosen the cake.
We pour in the form of a cake prepared previously. Bake in the preheated oven for about 45 -50 minutes. Remember, cooking times in recipes are always relative. The ovens are different from each other and you may have a more or less idea.
That is why in this recipe you have to be a little more careful at the baking stage. Because the cake is dense and moist, the toothpick test does not apply. The toothpick will always come out wet.
We just have to be careful that the center does not tremble as if it were liquid, and has little firmness when pressed. Then the cake is ready.
Upon cooling, the volume will decrease markedly. Sometimes only the center sinks. It's perfectly normal not to be scared. This is the specificity of the flour-free cake, because it falls into the category of soufflé.
