Canonically, droids gain sapience the longer they go without having their memory wiped. R2 has never undergone a complete memory purge, and neither has BB-8 to our knowledge. Nearly any droid can eventually achieve proper sentience given a long enough time. That said, I can fully get behind the idea that the will of the Force guides certain droids to experience more and avoid wipes, just like it guides organics along similar paths. After all, droids are living beings just like any creature, and they are protected by the same Living Force as the rest of us.
I am glad the five classes are the same as they were in Legends. The 'old' New Essential Guide for Droids was a favorite book of mine as a kid, and while Droidography is a bit shorter and lighter of a book from the reviews I have seen I am glad it has incorporated some inspiration from the New Essential Guide.
I feel like they would be class 3, because protocol droids could also perform analytical tasks, (such as finding out the odds), and class 1 were mainly for medical reasons.

Military tactics boils down to probability calculations that are a fair bit more complex than the odds of a ship making it through an asteroid field. Could a class 3 pull that off? Maybe, but they weren't designed for it.

I think that droids who defy their programming, like Alex discussed in the latter part of this video, would probably fall into a class of their own. Class Six, perhaps?
The droid classification numbers seem a bit screwed up to me. I would have thought the menial task droids like an MSE droid, or a Power Droid, or flying camera droid would be your basic, class 1 droids, because they have one function only, and go upward from there, with Protocol droids, who have to much more nuanced in their programming being the highest level, as they approach almost organi-levels of sophisticated reasoning, and a versatile, multifunction droid like an Astromech being somewhere in the middle, in terms of it's intelligence. Battldroids, though more sophisticated than your average labourer droid are still designed around a specific function, and aren't much better than a class 1, in those terms. Commando Droids are a bit more sophisticated than that, because they have to be able to adapt to situations on their own, whereas Assassin Droids would have to be at Protocol-Droid levels of intelligence and reasoning - ie actually able to think ahead and adapt, rather than tactically react from a database.
