I think because Hedwig isn't normally found in the castle, is my guess why she's not included. There are some white owls in the Owlery and 4 Privet drive that pass as Hedwig.

This may sound silly but what do you do with the room that the potions classroom replaces? Does it have a new home once you have potions class or does it just become extra pieces?
Not silly question at all! And really we don't know. Our guess (and hope) is that the rest of the castle sets (that help build the whole thing) will have an open spot. Otherwise it is kinda weird. I just couldn't pass it up on the off chance they do leave a spot. And it was cute.
If they don't give us an empty spot to slide it into, I'd probably keep it hidden and rotate it out with maybe the bathroom. We'll have to see as those other sets come out.
