1) Is it possible to do research in apple or orange juice, or in jams? You only have a technique for elderberry juice. How to do research in this case?
2) And if the juice is light in color? Is it necessary to perform a lightening procedure using polyvinylpolypyrrolidone?

The Reflectoquant Hydroxymethylfurfural (HMF) test, item 117952, is suitable for use in juices, fruit juice concentrates, and jams. For optimal results in your particular application, we suggest following the test instructions provided with the test kit.
We also suggest verifying the HMF content by employing a reference method to validate the test results. In the event of discrepancies between the results and those of your reference method, we recommend consulting the application note and decolorizing the sample using polyvinylpolypyrrolidone.

Please note that while we haven't verified the method for use with other honey products, we'd recommend the same approach for honey powder. How sensitive is the test? What is the minimum concentration of 5-HMF needed in the solution?

Determining the blank value of honey depends on its color. For repetitive measurements of the same type of honey it's sufficient to determine the blank value once. In general, it's advisable to take the blank value into consideration even when light-colored types of honey are being investigated for the first time.
With regard to the conversion from mg/ml to mg/kg, please note that the calculation is required because the honey is dissolved in water. However, usually you give a statement of HMF content in mg/kg, so the protocol provides the required calculation scheme from mg/ml to mg/kg.
