All of my pasta making tools arrive tomorrow. I've got the Atlas 150 and the ravioli and spaghetti attachments. I only made pasta a few times back in my Chefing days, so I'm excited to be getting new toys. I will say that the ones made in this video looked pretty inconsistent with the amount of filling, judging by look8ng at the color and other indicators, but there could be numerous reasons for this. If I remember, I'll come back after playing a bit and give a user review. Cheers... UPDATE: After watching several videos of the ravioli maker, I decided that with the amount of experience I have, I could make cleaner and more consistent raviolis by hand. I see too much wasted filling and pasta to justify having this, so I returned it and bought some ravioli trays, different shaped cutters, and some pastry bags w/tips for portioning out the filling. This ravioli maker would be useful if you had no experience and needed to make more than 30-40 ravioli, then I may reconsider. Hope that helps with your decision on whether to buy or not. Cheers...
It does help! I was debating getting the attachment for my daughter, but she's a perfectionist and also hates waste (as should we all), so I'm going to get some trays and pastry bags instead. Thank you for taking the time to come back to leave that update!

From rolling out the dough to having completed raviolis took me 15 minutes per dozen. The hard parts are making your pasta wide enough, and you can't stop production (even for a minute) once the dough is rolled out. If you have any questions, I'd be happy to help you and your daughter as I'm a perfectionist also. ( I also have 30 years' experience as a Chef) 😀 Cheers... 👍🙏🎄

Key to success with this one is making sure not to run the pasta through too fast and to make sure the pasta isn’t too wet. It can very easily stuck to the rollers and jam up the works
it can be interesting to use, but 1) you need to train first, understand the good moisture for the pasta itself 2) only for big quantities : for familiy quantities other methods are more simple and faster. If your intention is to prepare so many raviolis (to have them frozen or as gift for your neighbours or family) it can be a good instrument. Good to know : it costs around 50 euros. And you need to own already a Marcato Atlas Device.
@panuntukan I have a Williams Sonoma ravioli press I got at the Good Will for $4. It makes a bunch of ravioli in no time at all. You're correct about the Kitchen Aid attachment. Although it looks like fun, I can get a lot made by hand with less cleanup.
After watching this, I'm going to tend to agree with you. I've got the entire setup arriving tomorrow, so I'll give it a try, but hand filling and cutting looks easier to me. I've also got 40 years in restaurants, so I probably have a bit more training than most. LOL. ;)
Why can't you mix the eggs and flour all at once? What happens if you do it that way instead of slowly mixing in the flour? I've been trying to find answers but it seems no one has asked this question before.
You run the risk of overmixing the dough which could result in tough pasta, by slowly incorporating the wet and dry ingredients you have greater control. Also, if you're making your dough directly on your counter (great for saving dishes) the well prevents eggs and water from spilling all over the place.
@@laurenvolpatti7293 But you can't overmix bread dough right? The last time I baked some fresh burger buns I mixed in the eggs and flour with the yeast water all at once after the yeast foamed. The dough was pretty soft too.
@@user4667 overmixing bread dough would happen by kneading too much, usually this is more of a risk if you're using a dough hook on a stand mixer. Different types of dough have different needs 🙂
Hey there, The well will keep the wet ingredients within the well, rather than running all over your tabletop. Many years ago tools like food processors did not exist. So, this is the traditional method of making pasta dough. Today, you could experiment by making the pasta dough in a food processor. I have done this in the past, with success. Have a great day!

As Italian I can say it's certainly a good helping hand for beginners at making fresh stuffed pasta. But it takes a lot of steps. When you get good in making sfoglia it takes less time and steps to make tens of ravioli. Definitely it's a good supporting took though
I don't know why but from the view of the video.... I don't know if it is an easy and good machine..... If you check properly those ravioli don't look nice from the result. It seems there is air inside🤷♀️. I know doing it with hands will take ages but at least one can do better than that
and you can add more love and good energy when you make you make pasta by hand, just like your nonna used to make it :) I find making pasta or baking my bread relaxing, it makes me slow down. It may be a bit more time-consuming, so what? Plus, as yo say, if you practice it and have some skills, it can take less time than using the machine.

It is important to strain any extra water out of the spinach. Demonstrated in this video you can see the spinach being squeezed through cheese cloth. All that extra water may be causing your mixture to fall apart. Hopefully this helps. In the video fast forward to 1 minute and 26 seconds to see the demonstration.
Hey there, Gluten or Keto recipes can be a lot more sticky, or less hydrated. You would need to experiment with the dough to see exactly what works. For best results '00' or all purpose flour is used. Have a great day!

If you are looking for a maxed out really filled ravioli, you will be better off using a manual stamp or the tray. Hi Delia, the width of the pasta is as wide as the machine (6 inches/15.2 cm). For the thickness of the sheet of lasagna, I stopped at notch 6 on the machine. This is suggested for ravioli. The recipe is within the video, written in the prompts at the bottom.
I've spent 2 weekends and about 30 dollars worth of ingredients trying this. How in god's name do you get the dough wide enough for the ravioli attachment? The roller can make it desired THICKNESS, but not width. How do you get the width to be consistent down the long sheet of dough?
When you take the pasta ball out of the fridge pat it with flour then squash it into a rectangular shape with your hands so that the width is about equal to the width of the rollers. As you decrease the thickness by rolling the pasta will get slightly wider but no wider than the rollers.

Hey there, Never immerse the machine into water. Simply use a damp cloth and wipe the unit. The white plastic component can be removed and washed on its own from the ravioli attachment. Please refer to the manual for full details.

I’m having issues with the dough getting tore up by the two scrappers on the bottom of the attachments. Any suggestion?
What thickness are you rolling it to? Also, is your dough too wet maybe?

It is important to strain any extra water out of the spinach. Demonstrated in this video you can see the spinach being squeezed through cheese cloth. All that extra water may be causing your mixture to fall apart. Hopefully this helps. In the video fast forward to 1 minute and 26 seconds to see the demonstration.

Never immerse the machine into water. Simply use a damp cloth and wipe the unit. The white plastic component can be removed and washed on its own from the ravioli attachment. Please refer to the manual for full details.

A nightmare to clean! The plastic part should be able to be removed to clean it well. First and last time I use this attachment.

So sorry to hear that. The top component of the ravioli attachment does come off, the rest of the unit cannot be submerged in water, so a damp clean cloth is suggested to clean the unit. Please review the guidelines accompanied with the attachment for further instructions.
