When I was a fisherman (crayfish) and caught them in the traps here in Australia, we always pickled them numus style.. chilli pickled occy with cold beer is so good
That’s quite like we do it in Malta - low and slow braise. Only we cook it in red wine instead of water. And we serve it right from the stew without searing.
Cook it... to the right temperature, that´s the trick I remove the hassle and Sous vide the thing and then sear it on the grill or griddle... Exactly as sensitive to temperature as shrimps, well actually more: over cooked = rubber
I've been to Spain last year and had a great time when it came to food. I once ordered Pesciato Frito: fried fish in a pea flour batter. Later I made that myself with ansjovis, muscles, sliptong but also inkfish and Octopus. Loved it. Now I think unless it's wood or charcoal fired, the Braburra has nothing to do with BBQ. Could you turn this dish I discribed into a BBQ dish? I also smoked meat (like chicken) myself and than fried it. Lovely!
Wow the whole video is a delight to watch and the yum at the end says it all, the only trouble is is buying fresh Octopus in England. My first time eating it was a local cafe in Cyprus as a 15 year old boy when I was given a grilled Tentacle to eat and loved it.
You’re a genius. I’ve eaten Octopus every chance I’ve had over seventy years. I’m American and have eaten it there and in The Caribbean region. Some people know how to prepare it but most don’t really. I also love eating Conch. It’s very popular in The Bahamas. They prepare it in a salad, the meat cooked in lime juice, peppers, onions, tomatoes, mango, whatever the cook wants. I find it lovely. I don’t know why you couldn’t cook Octopus in citrus juice and eat it in a salad. Next time I can find an Octopus in the seafood market, I’m gonna make it as you did. Thanks for a great video, always entertaining..
How about leaving tentacles intact & throw on grill to char a little? Love that dish in a Greek restaurant. Just realized this vid was brought to us by plancha/flat top company
You make the tentacles curl up and then boil the octopus for arround 20-30 mins. Take it out, cut It and serve It with olive oki, salto and páprika powder thats how un Galicia its cooked.
Never cook tomatoes in a reactive metal, like cast iron. It will add a steel wool flavor to the dish. Also, always put alcohol into tomato sauces to release the phenols in the tomatoes, which is what will make them naturally sweet without adding sugar. Never add sugar. For this dish, I would have added a sangre del toro or even a Chianti. Add some bay leaves to soften the sweetness if you want.
Er zijn meerdere wegen naar rome Roel. Met name de octopus eerst sousvide koken is helemaal top. Ik ben het met je eens van die andere methodes trouwens.
The Plural of octopus is octopuses, not ostopussies so there is no reason to act like it is a bad word or chance you would be demonetized for saying it correctly.
Love this. Where I live octopus costs 5 euro the kilo. I used to grill it, but it ended up chewy many times. I will try this method. Thanks!
Great job, Morrison ! A real pleasure to watch....all of your care pays off.
And Roel, great episode and recipe!
Thanks !

The Plural would be Octopi.
You beat me to it!
octopodes is technically more correct since its a greek word.
@@sucktdeep Yes and No. Octopi is more commonly used in English as a Plural classification. But Octopodes is more of a scientific description.
I said the same thing 🤣
You're all wrong, it's tortoises.

A rare seafood episode on Pitmaster X 😋

Fantastic! I need a local source for fresh octopus. That looks amazing!
Is that an enamel coating on the plancha? It's always so shiney
Yes
🙋 Hey Pitmasterx !!! Great job 👍 Happy Easter to you and all the people on this blog 🐣🐰🕊
🇮🇹😎🍻
👍👍👍
I love it being chewy why make it tender?
Doesn't octopus have a skin on it that needs to be peeled
Try to cook it in a deep pan with no water some pepprcorns a couple of garlic cloves and let it simmer until a toothpick is penetrate easy
For all octopusses (or watherver plural x) ) i've always ear that is 2 minutes or 2hours but notting betwen

well done with that Octopus. Think you out did every one else that has beaten there Octopuses meat.
Oh man - you said "okay Google" and set off my phone!!! 😂
Same 😂😆
Chapeau!
Fantastisch!
Better things to eat than octopus.

happy ramadhan fasting
Love octopus one of the best seafood ever
you shouldve cooked your beef tongue like this...
Come to Greece 🇬🇷 to eat real octopus recipes 🎉
Freeze it. Pressure Cook it. Char it. Period.
This is a sad bbq. You do not need this type. You could make this in a regular kitchen.
🤤
🤣 slip of the tong, looks good
the plural of octopus is octopi
😂👍
Where’s UNCLE ROGER?
NOOOOOO!!!! SQUIDWARD!! 😭😭😭
The Plural of octopus is octopuses, not ostopussies so there is no reason to act like it is a bad word or chance you would be demonetized for saying it correctly.
My wife said NO SEA SPIDER FOR HER OR ME EITHER!
Wrong way to do it
😋😋
A two hour boil is too soft, a simmer is much better. I've been doing it for 30 years.
Maybe you were doing it wrong for 30 years. 😆
Plural is "octopusses"
So long as you realize the fact that an Octopus is a sentient being that is aware of the meaning of murder....you're good 👍
Nobody cares
Omg you are such a good person wish i could be this pure..
And it's inedible not unedible 😊 but we will forgive you as English is obviously not your first language xxx
👌🫣😁
Sorry...not interested in eating anything that is or possibly could be smarter then a human.
Pigs are as smart as some dogs, and have a strong sense of family. Octopi barely live for more than a year.
