I'm not a professional, but also have similar issues. Do you like the taste of your espresso even though the ratio is not 1:2? I enjoy the ratio similar to yours, and use a Acaia Lunar as timer/scale. Really accurate, but controls are very sensitive. If you want to improve taste, check your water type. IMO, spring water has a nice taste to it, or even filtered tap water (non-RO). Hobbyist's would get distilled water and add minerals to it. Third Wave comes to my mind. (I don't work/advertise for them) I've purchased beans from Costco and online stores, and have kinda settled on Lavazza to be a household favorite. Coffee Gear: Niche grinder, Weber Eg-1, and La Marzocco LM. (I'm definition of "All the gear, no idea." lol)
I enjoy the flavors just fine with the ratio I'm getting. I get pretty close to 1:2 but not exact... I think some of it will have to do with the inner burr changes, and I don't really want to get into that at the moment.... lol afraid of messing something up. I've tried starbucks beans (no), fresh beans from local shops (good but $$), recently tried Lavazza, and liked it pretty good. What flavor do you get?
