I love these cakes, but I do think fondant is relied on too much. I know someone's it's a necessity, but it's not particularly tasty and I really enjoy the times that other candies are used ingeniously.. There's definitely a lot of skill involved, but unfortunately I often feel like I'm watching more modeling than baking and sugar craft.. It's still impressive, but I just like to see more than everything made with fondant...
