I usually put them in the fridge for approx. 5 minutes and let them sit for 1-2 minutes before dipping them into the chocolate. This will avoid any cracks on the chocolate. I use Merckens chocolate. I heat it for 30 seconds, mix it, heat it again for 30 seconds and mix it. The quality of the chocolate you use makes a huge difference.
