What do you use to prep the trowel for the third coat?

This plaster is tooling like it's veneziano - without any sand, just the finest particles. Video resolution isn't great, but the demo man is able to feather out the 2nd coat down to virtually nothing. Is this really appropriate to applying marmorino?

We use large stainless steel trowels 110x47 inches (280x120 cm) for the application, and medium stainless steel trowels 94x40 inches (240x100 cm) for the polishing phase.
