- Chicken marinated in coriander (cilantro) and lime creates the most amazing flavour and caramelisation that you just can't beat. This recipe is super easy to make, it’s cheap, takes very little time, and best of all it tastes absolutely amazing. Ingredients -
Marinade -
2 - Large Limes, Juiced
Half Bunch (25g) - Coriander (Cilantro), Roughly Chopped
5 - Garlic Cloves, Minced - • The 3 Best Ways To Pre...
3 tsp (11g) - Brown Sugar
1 tsp (2g) - Ground Cumin Seed
1/2 tsp (1g) - Ground Coriander Seed
1 1/2 tsp (2g) - Dried Chilli Flakes (Optional)
2 Tbsp (40ml) - Olive Oil
650g (1.4 lb) - Chicken Thigh, Skin off or on
1 tsp (10 Cracks) - Black Pepper
1 tsp (5g) - Sea Salt Flakes
Additional -
1 1/2 Tbsp (30ml) - Olive Oil For Cooking
Lime Wedges To Serve

I made this yesterday with a few modifications:
1. I omitted the coriander as I didn't have any!
2. I replaced the red chili flakes with 2 freshly chopped and minced habaneros ( I will use 3 next time).
3. I just oven baked the chicken (skin on) at 450°F for 25 min and 400°F for 15 minutes.
I let it marinate overnight and put it in the oven the next day. At the end the cilantro looked black but it wasn't burnt. and I added some marinade on top of the skin at the 25 min mark. This recipe is amazing, easily the best chicken I have ever had.
Next time I will wipe the marinade from the skin before it goes in the oven, put it underneath the skin, and top the skin with olive oil/salt/pepper so the skin crisps better and the cilantro doesn't "burn."
Also, your pickled onion recipe is the best I've found. I add cumin and ginger to mine.
Coming back to this one after 5 months to say that this is now my go-to recipe. Every shopping trip must now include coriander, lime and chili. I use this recipe to make wraps, or serve on a bed of rice.

I made this marinade for shredded rotisserie chicken I bought (used it for tacos)! Came out great, I just used less lime and a little less salt since I wasn't marinating whole pieces of chicken. Great recipe 😋

I wanted to incorporate this approach with a coconut milk and lime dressing/sauce/marinade I've made couple times. But wondering can I simplify the process and just build the whole thing in the oven, ie, oven sear the chicken instead of stovetop. I bet I can. My kitchen has no space, so I like to put stuff out of the way. It essentially using full fat coconut milk instead of olive oil in your marinade., T he rest of the coconut milk gets buzzed or blended with more lime, including some zest, plus shallot, scallion, more cilantro, green chili, red chili flake, salt,pepper. This should chill to thicken up if it's going on a salad. I'm so glad you made a lime chicken recipe video!

Hi! Small detail but I'm curious: Is there a reason you don't add salt and pepper with the other spices but only after adding the chicken?
Had it for dinner tonight 27/1 absolutely fantastic, I think I messed up n got the pan a bit too hot as there wernt many juices left! Another try another day, cheers Jack 👍👍👍👍
Happy to hear you enjoyed it. I use a heavy based skillet so it can control heat better. If your pan is quite thin on the bottom, that will mostly likely be the problem

@@ChefJackOvens So I made it the first night and it was a bit tart. I had so much marinade and added more thigh fillets.
I fiddled with the ratio for the marinade and just kept adding sugar and fish sauce.... Yeah I know and just kept adding both to get that sweet, sour salty of Thai cooking. I probably risked food poisoning tasting marinade that had already had chicken in it...
Anyway - 2nd round it worked a treat. Heating up the pan to red hot, then adding the oil also hugely improved the colour!

This is so good!
I had limited success with this one. Problem was that searing the meat at such high heat, i got good charring, but all the solids in the marinade were burnt. So chicken ok, but no usable pan juices. Jack, does this mean i had the pan even too hot? I cook on induction, so its quite hard to control temperature precisely. Very easy to end up boiling the meat, especially with all the marinade liquid in the pan as well.
This has been a problem for me, as well. I've tried lowering the temperature whilst using cast iron and stainless steel with frustrating results. The only reliable solution I have found is to use nonstick pans. You don’t get the rich sear you get from steel and iron, but at least you’re able to salvage the fond. I would love to hear what Jack has to say on the matter.

This is not extra virgin olive oil which burns a lot faster 😊.

Hello! Yeah the seeds are what produces the ground coriander 😊 Grinding your own seeds allows for a stronger more pungent fresh flavour 😊

This is regular olive oil and not extra virgin. It’s more that capable of hitting that high temperature.
