Was the meat undercut? Because any other would not cook tender in an open fire and would need to be pressure cooked? Or are you from abroad where the beef is processed and doesn't need long cooking time. Here in India if cooked like this it gets so chewy
Hello, Carol! Thanks for the question. I didn't use undercut since it can't offer a good width for the slices. I used a variety the butchers refer to as 'gola' (I reside in Mumbai). The quality of meat surely becomes important in such cases; that coupled with tenderising the meat (by the use of a mallet) can make the cooked meat easier to chew :) Hope that helped 💫
