Hi Olympia thanks for the feedback, well I have used undercut meat and you have to give the cuts from the bottom by holding pressure on to ...but I will suggest you to get it cut with the butcher they will give you exact cuts just say give me 3mm of cuts hope this helps god bless

Nevertheless as I was watching it a thought came to mind that once the roulade is prepared and in raw stage ,if we flour it dip it in egg wash , roll it in bread crumbs and fry it , you have a second version for roulade , just an idea which flashed in to my mind, Thanks
