    I just brewed up a German pilsner today. I was super worried because I can't get the wort below 71f and I'm looking to ferment at 54. I did crank up the fermentation chamber and add some ice packs to the fermenter and it's down to 63 in about three hours. I'm probably way over thinking it but I've never used global before and I think it'll be fine cheers man

      It will probably be fine, this yeast is very tolerant. You may find it a touch less crisp and clean but it’s pretty minimal compared to other lager yeasts

    Thanks for the video! I actually brewed a Dunkel last Thursday, made 50 liters of wort, splitted between two fermenters and one was pitched and held at 19C, one at 10C. So curious how these beers turn out!

    I've been wanting to see more warmer lager experiments after reading a few because I think it might be one of those processes where you can dump another tradition without much of an effect.

      Count Drunkula thanks count! Seems like it’s possible with quite a few lager strains although some are more sensitive than others but I will happily abandon cold fermentation if I can!

      Depends on temperature but in my keezer at about 5/6c its approximately 14psi for force carbonation

    Do you recall if you followed a lagering schedule at all? Was it abbreviated or did you leave it at a temp for X days? I've never lagered a beer, but it looks fantastic and best of all - quick to ferment this way, with all the "magic" happening in the keezer? Great video and information, as always! Cheers!

    Nice dude, worth considering for next summer. I do hope to brew a lager that I prepare in about March and lager properly until July/Aug as I always end up drinking my pilsners young...last few always taste the best 🍻🍻

      Saffer Brew yes although it’s obviously possible to speed up the ferment by doing it warm I don’t think there is any substitute for a proper lagering period but as I usually have to lager in the kegorator it’s basically on tap straight away so I don’t think I’ve had any last longer than about 6 weeks yet!

    Nice one buddy! I've been hot fermenting lagers a lot. And done several videos about them. Maybe you seen one or two of them. My hot fermenting lagers have been fermented under pressure though. Would be cool to do a side by side. We what the difference would be. Hot under pressure and hot normal. Cheers !

      DrHans Brewery thanks Johnny, yeah I’ve seen some of your lager videos they helped me get up the confidence to try out this experiment. That side by side would be really interesting I’ve not really looked into fermentation under pressure at all yet

    That's one beautiful beer! I've heard the yeast pronounced "Vyn-shtef-ah-nur." I've been fermenting as high as 70°F (21°C) with it, but I was using Fermentis Saflager 34/70 (dry). I've been washing and re-pitching the colony since February with no negative effects. I've been using it for IPLs, Kellerbier, Ambers, you name it. It isn't necessarily my favorite yeast in the world (my favorite is San Diego Super), but it certainly is the most flexible and reliable. I can count on it to make delicious beer no matter what I throw at it. Just curious, where do you live? I live in Portland, Oregon, and although I've heard Imperial Yeast mentioned on Brülosophy, I didn't know their yeast was internationally available. I've always been really put off by the ridiculously high cost, especially because I live in the town of their headquarters. I bought their yeast twice because I felt like I was supporting a local upstart. Now that I know they're available around the world, I think it's a damn ripoff. Give me US-05, BRY-97, Abbay, or 34/70 any day. Liquid yeast is practically pointless IMO, especially at Imperial's price. What did you pay for a pouch?

      I’m in Bedford in the UK, Imperial has just recently become available and it is pretty expensive at about £9 a pouch although that isn’t that much more than the smaller packs from white labs etc which are around £7. Some of the dry yeasts are getting pretty pricey here too w34/70 is nearly £5 a pack from most suppliers! I hear what you are saying about liquid yeasts that are available in dry form but I do like the variety of different strains available in liquid and I usually cultivate slants of them once I bought a new one so I can reuse whenever, that way works out quite economical for me.       I use San Francisco lager yeast to great effect as I have some secrets divulged to me by anchor brewery that I've used to great effect to get superior beers from the yeast, if you use it right and know what you are doing you will make a beer that will fool a judge into thinking it was an actual lager yeast, it sure did fool them at the NHC. It is my favorite yeast to use in my vienna lagers and I also brew Anchors steam beer and I have it authentic as I have the official recipe as well as the names of the malt companies and everything that they use, So I can get insanely close in taste if not identical.

      your best bet is to look for kolsch or cali common yeasts with a wide temp range but if you have a space that doesn't get too warm the w34/70 or liquid equivalents like L13 would probably be fine as well. A few people use clean ale yeasts like US05 or nottingham for pseudo lagers but that would usually be fermented at the cooler end. If you can find them some of teh kveik yeasts are quite lagery and have insane temperature range so could be useful if you cant keep it around 20c ish

      This strain is a good starting point and the Imperial 'Harvest' yeast is very good as well, my personal favourite is WLP802 which is a Czech strain I haven't ever tried fermenting that one warm all the way through tho but I have done the fast lager method with it with some success

    Nice video! I’ve had great success with Saflager S-23 at 62 degrees F, as well as K-97 at the same temp. Never saw anyone ferment in rectangular bins like that, looks like a cool idea. Are they made for the purpose? Cheers!

      Stephen DiStaso thanks Stephen, the bins are just general purpose storage boxes but they are made of food grade plastic so work pretty good as FVs

    I like imperial they are an amazing company I've even gotten some pretty cool yeast and other item care packages ill call them, I have a couple of cool hats from them. That I wear all the time.
    I wish that my local shop would carry them, but they don't so I have to pretty much get it straight from imperial.

      thats what i thought when I saw the other experiments but it really works, going to do another warm fermented pils this week to make sure it wasn't a fluke
