I’m so glad you’re here and enjoying the channel!!! I do touch on this olive oil point in a couple of videos - people have been cooking with olive oil for centuries, so it’s perfect for stovetop cooking or baking. Obviously it’s not a good oil for deep frying but we don’t want to do that anyways ;)
Great question! Absolutely, I’m always a huge fan of canned things! The size will completely depend on how much volume you want to make. For a personal portion, just a small 14oz can should do the trick. Be aware that canned tomatoes often are quite watery- you’ll want to cook that sauce with the lid off to let that extra liquid evaporate
Mm not necessarily- Only if a sauce was specifically supposed to be “herby.” Many classic pasta dishes are very pure in their ingredients. For example, pesto has lots of basil, so of course for that it will have herbs. But a tomato sauce for pasta is unlikely to have things like herbs, onion, garlic from what I’ve seen (how different than how we are taught in the USA!)

You sure can!! You may even want to add the meat right at the beginning to brown it before cooking the veggies
