    Crush the tomatoes by hand before adding them to the pot. Use a wooden spoon. Don't blend the mixture at the end.

      Exactly, also add a can of paste and cook about 20 min on simmer after. I dont like sauce that ends up under the noodles because its to thin and over mixed.

    San Marzano tomatoes are the best so I'll use them. Very nice sauce texture.

    Instead of a blender, I use an immersion blender to finish off the sauce right in the pot. Love this recipe. Tasty!!

    I want to make a bunch and freeze it, so I can use it later. How long does it stay good in the freezer ?

      ladyblue9801 You should be fine freezing it for quite some time (a year or +++). There is not much fat in this sauce and the texture is (unfortunately) nil, so there is not much damage that a freezer can do to this sauce. I'd recommend using spring onions and omit the shredding at the end btw..

      ladyblue9801 Freezing anything over 1 yr would just be plain lazy. I totally do not suggest that you take this persons advice. even if you have an airsafe bag to store it in. Possibly up to 1 month, but that is even pushing it. This is such an easy recipe that to store it in mass quantity for that period of time would just not make sense. Also, spring onions are an onion flavor and will taste completely different then the basil will. the spring onions are also available in Spring.

      ChefsEats.com Actually it depends on the freezing temperature; Here in Germany, freezers use a "star" classification from 1*

      Just FYI, careful putting anything hot in the blender . I had a blow over.

    Not bad. Not a fan of the blender. You can take the tomatoes from the can and mush them as much as you can with hands and fingers before dumping in pan.

    I've heard you shouldn't blend the seeds of the tomato because they break open and make for a very bitter sauce. I crush my San Marzano by hand.

    Would be a better pasta sauce. I always use red wine in pasta sauce but I would never put it in pizza sauce. Other than that looks good.

    Add 1 t salt, 1 t sugar, olive oil, black pepper to the recipe list.

      Your tomatoes should make it sweet enough where you don't need sugar unless you enjoy diabetes!

    All due respect there chef! If you are using San Marzano tomatoes they are sweet enough and unless you like diabetes lose the sugar! Also, you are not in the restaurant so crush your tomatoes by hand chop your onions and garlic fine and simmer your sauce at a nice simmer so the tomatoes can dissolve naturally about an hour! Lose the damb blender unless you want tomato soup!

    Are San Marzano tomatoes the best? These tomatoes have a huge reputation and boast a Protected Designation of Origin status (DOP, or sometimes written as PDO - Denominazione d'Origine Protetta) which specifies the precise cultivar, processing method and region in which the tomatoes can be grown.

    A class action lawsuit alleges that San Marzano tomatoes sold by Cento Fine Foods are misrepresented and are really less desirable tomatoes. Cento Fine Foods sells canned tomatoes from Italy labeled as “Certified San Marzano” tomatoes, but the tomatoes are not the type of tomatoes that consumers expect when they make their purchase. Allegedly, the San Marzano tomatoes used in many Italian tomato sauces are sought after by consumers for their meaty quality, low seed quantity, elongated shape, and low acidity. According to the Cento tomatoes class action lawsuit, Cento sells their certified San Marzano product for around twice the price of other tomatoes.

    “This fraud is abetted by the abundance of lower quality Chinese processed tomato products imported to Italy, more than any other country, to use in the finished tomato products,” the Cento canned tomatoes class action states.
    Sibrian says this means that many Italian tomato sauce products are really Chinese tomato products, a claim that is completely false according to Cento Fine Foods when it comes to their tomatoes.
