Classic Southern Mixed Greens Recipe: Growing Greens | P. Allen Smith

    SAUTÉED MIXED GREENS RECIPE
    Ingredients:
    1/2 lb bacon; Chopped (or ¼ cup of Vegetable Oil)
    1 large red onion; Chopped
    3-4 Chopped Turnips
    1 Bunch each Collard, Mustard, Turnip Greens; washed, trimmed and chopped
    1-2 tsp of Red Pepper Flakes
    ½ cup of Chicken Broth
    Salt and Ground Pepper to Taste
    2-3 Cups of water (as needed)
    Instructions:
    Fry the bacon with the onion and turnips in a large skillet over medium heat until the bacon is cooked and the turnips begin to soften, about 10-12 minutes. (If you don’t want to use bacon, you may want to add a ¼ cup of Vegetable Oil) Add in the chopped greens, and cook and stir until almost tender; season with salt, black pepper, 1-2 teaspoons of red pepper flakes and ½ cup of of chicken broth. Stir well; cover and cook until tender, for about 10-15 more minutes. Stirring occasionally so that the greens do not scorch.
    Serves 4-6 people

    Love love love love love GREENS!!! Grew up eating them all the time. I like mixing them as well. I love adding leftover greens to my homemade soups and beans!!!!! Yummmy.

    Yum! Yes, you have inspired me to grow more greens and turnips too. Growing in my Southern California mini garden, a lot of lettuce. Different types and it looks beautiful at the moment. Love gardening in the fall.

    A lot of my customers in the produce department where I work always add smoked turkey parts to their greens. A pressure cooker makes easy work of tender, flavorful greens! Thanks for sharing.

    My Grandma, who was from Georgia, always cooked her greens with "fat back", and apple cider vinegar. As a small child, this was the worst smelling stuff on the planet. I would hide at dinner time only to be dragged back to the table crying. Collard and mustard greens scare me the most.The good thing to come out of this is that I love eating most of my vegetables raw :) My Grandma has been gone for many years now but some of my favorite memories include going out to her "collard tree" and picking her the tenderest leaves for her dinner.

    Now I'm really craving greens! And I'm going to try your recipe, sounds wonderful. One of my favorite ways to cook greens is inspired by my love of spanakopita. Saute leek and garlic and add any variety of greens. Season with dill, pinch of salt, and pepper. When greens are about half wilted, remove from heat and stir in a couple of tablespoons of crumbled feta cheese. By the time you grab a bowl and fork, the greens will be perfectly cooked and the salty feta just starting to melt. Serve with a lemon wedge.

    I just made a mess of collard greens yesterday, and I'll be making more next week for Thanksgiving. My great grandpa always grew them, I've never grown any, but maybe next year.
