We can feel at Old Lahore kebab shops or we felt that in our child hood kebabs... Cant find that aroma in most of the seekh kebab shops now a days... Same in Chikkar cholay ... U can feel a special taste n aroma caused by a spice magaan... U can get it from any old pansar shop... Not too much but one or two pieces wud b enough for the quantity u cooked.
میں نے پکایا زیادہ مرچ میں ہے مگر جو مقدار بتائی ہے اس کو فالو کریں گے تو بلکل نارمل پکے گا ایک چائے کا چمچ سے زرا کم سرخ مرچ ڈالنی ہے ٹوٹل اور 3/4 چائے کا چمچ کالی مرچ

I love chikar cholay this way, but I mentioned that one may reduce spice quantities according to one's taste buds
