    The humble nasturtium seeds are a hidden gem waiting to be discovered. Transforming these unassuming seeds into tantalising capers will elevate any dish!

    Fresh nasturtium seeds
    1 tbsp salt (for brine)
    2 cup water (for brine and pickling)
    Pickling solution (homemade apple cider vinegar, water, star anise)

    Pick: Harvest green, plump nasturtium seeds directly from the plant.
    Brine: Dissolve salt in water to create a brine. Soak seeds overnight in this mixture.
    Drain & Rinse: The next day, rinse seeds thoroughly.
    Pickle: Pack seeds in a sterilized jar, cover with your pickling solution, and seal tightly. Allow them to pickle for at least 3 days for the best flavor infusion. Two weeks is the sweet spot!

    Love these…❤ Only use seeds that are young and firmly attached to their stems. If they fall off the stems they will make dry, chalky, ‘woody’ capers.
