- The Giant Crabs are a fan favorite, and seemingly must be popular among the developers as well. There's a surprising bit of world building behind some of them that is almost impossible to conclude just from the ingame information though.
Song used: Korok Forest (Night) - The Legend of Zelda: Breath of the Wild OST
The individual characters that typically make up "Shirogane", 白金, essentially mean "White" and "gold", and the same actually seems to be true for "Albinauric", which is based on the Latin words for white and gold, album and aurum. Interestingly, the game uses hiragana for Shirogane whenever referring to the Albinaurics, so it's significant that it's written like that on the crabs.

A deep, intellectual conversation
Another thing to note is that a lot of the crabs that breathe sleep-gas can often be seen in the vicinity of Trina's Lilies, most notably in the swamp near the Albinauric Village, where they can be observed eating the lilies outright.

And the courtyard of the academy also has multiple Trina's Lilies.
And the concept of "Sleep" is also deeply intertwined with sorcery and the Wisdom of Stone. From what I could summarize, it seems to be a state akin to being half-alive, inspired by the spiritist beliefs of the spirit leaving the body during sleep.
Love this observation! Albinaurics are notoriously fond of Miquella/St. Trina, so an affinity for Trina's Lilies certainly makes sense.
Whether or not the crabs are also homunculi, a diet of Trina's Lilies (often found near groups of 2nd generation Albinaurics) perfectly explains their mysterious sleep-mist.

Crabs are foragers so maybe the fact they change characteristics based on location indicates more of what they are eating and not necessarily a unique origin

When Zullie asked why Raya Lucardia would create crabs, I have no idea why but I immediately thought, "They're making an army to fight the giant crayfish!!" and got super pumped about it. And then Zullie crushed all of my hopes and dreams with a perfectly logical reason supported by the lore. No epic crustacean wars, no one to stop kaiju crayfish from firing their mile-long death beams. The lore is cool though.

One key connection that should be looked into is the fact that in the Zodiac, the sign Cancer is represented by the Crab. Cancer’s sign ruler is the Moon, hence its connection to Raya Lucaria. Just a thought.

I was thinking of Crabs in Elden Ring as something of an Indicator Species (I forget if that’s the official scientific term for it). Like when scientists study a particular species of frog in an area to determine the region’s health, as those frogs are very susceptible to environmental factors. There is one such species I learned about in my area as a child, and to me it made sense to look at the crabs as an indicator of how the area might weather even myself. Being subject to Sleep, Frost, Deathblight, etc. If the Crabs are like that, _I_ might end up like that here.

All the zones have different types of flowers, and most of them have different crabs so it seems more like high sensitivity to the environment.

Further proving the hypothesis that crabs are the ultimate lifeform
Supporting the theory that the consumption of albinauric blood can lead to undue effects in the crabs, a fairly prominent place to find large shirogane crabs is the poison swamp next to the Albinauric village, under the Liurnia Plateau. The poison swamp is full of St. Trina's Lilies, which are used for creating sleep consumables and are, possibly, inherently linked to areas outside the Grace of the Golden Order and especially to Albinaurics. The poison swamp is *also* one of the classic Miyazaki areas where you realize the ground you're walking on isn't lumpy, it's mounds of corpses. As there are posioned mad albinaurics weeping among the dead, it can be *somewhat* safely assumed that these corpses are all Albinaurics, killed during the purge of the village.
And the crabs you find there are big, white, and spew sleep.
Is it anything? Probably not. But it might be. And that's the fun of a FromSoft title.
Actually, the sleep gas breath being an effect of eating St. Trina's Lillies makes a load of sense. I always figured the sleep mist arrows and grenades were developed after watching crabs eat the same stuff.
It's possible the bodies down there actually died a natural death since albinauric blood is mercury and they all lose their legs and go insane near the end of their life anyways, and the heap is used as a communal mass grave of sorts

Honestly I just think the idea that alchemist sorcerers making a bunch of homunculus crab pets is adorable.
Similarly, Fromsoft's love of crabs discovered during DS3, and their newfound insistence on randomly inserting them in whatever places they damn well please, is equally adorable.

The Primordial Crucible and Great Tree frequently have animal characteristics associated with it; the Crucible Knights take on tails, wings, horns, fire breathing toad-mouths, etc. Omens have horns, as we all know, and Godwyn, the one most closely associated with the Crucible (through literally being attached to it by the roots) takes a bizarrely fishlike or insectoid appearance. Notably as well, the Crucible is a source of "change", given that the animal traits are frequently an unusual growth on an otherwise humanoid creature.
Through this, we can perhaps extrapolate that creatures in the Lands Between are "closer to the Crucible" and thus more susceptible to changes in their environment. The crabs, being hard-shelled, aquatic animals like Godwyn's body, are perhaps the closest beings to the Crucible on a conceptual or magical level.
Because of their closeness to the Crucible, they are much easier to affect by the "change" happening around them, meaning they take in their surroundings far easier than other creatures like humans, which are actively resistant to change, as shown in the Golden Order itself.
However, I also think a much funnier theory is that some poor Raya Lucaria student needed a last-second senior project and just decided to start duplicating crabs with the Albinauric formula, and it got out of control.
"duplicating crabs" sure is a phrase i wasn't expecting to read today, but god damn was it just the right flavor of comedic for my 2 AM brain.
On one hand, I love trying to tie it to the crucible. on the other, it'd be really, really funny if either crabs are just an easier form of albinaurics to make as practice for students, or if you goof the albinauric formula at all, carcinization just takes over and you end up with Crab
Elden Ring feels like a ton of its higher writing and concepts are taken or inspired by both old and modern scientific understandings, like alchemy versus miasma, but then filtered once more through this medieval tapestry-type storytelling and abstraction. Tell a medieval scholar about Carcinisation - the theory that all life forms eventually evolve to a crab-like design. Also show him a crab so he knows what they are. His natural first thought would be "well if a Horse became a Crab it'd be Awfully Large and hard to ride, but would it still eat grass an hay instead of...whatever crabs eat?" And so you get crabs of varying sizes by default. Crabs of different biomes. Crabs that can spit poison or fire because spitting is a thing crabs do. There's just a tapestry of a man with tree branches in his armor riding a human-posture wolf fighting a giant crab hanging in a castle in another timeline and everyone just agrees it was weird then, and weird now.
Crabs as bottom-feeders also plays in to how the Prawns & Crabs are cooked by Blackguard as a means of exterminating parasites in them, so they're not transmitted upon consumption.
Since a few dungeons have crabs that are worm-infested alongside the rotting but not undead bodies of individuals down there, the whole ingestion theme is a common one that's also used directly by Yura when he's outside of Raya Lucaria Academy.
When he says, _"Wretched worms, leave me be."_ he's actually using a term referring to Japanese dragonfly larva that are taken from rivers and eaten. As he is later possessed by Shabriri and the dragonfly-nymph-like Astel's meteor is underneath the madness infested Yelough Annex Ruins, there are even more themes that follow along that same thread.
It's cool to learn there's so much to these crabs. My initial impression with them was "wow, they added in the same crabs from Ds3, but slightly cuter and more polished"

Fun fact about the crabs found above Godwyn in Leyndell, they also have his Golden Hair growing on them!
I always assumed that because of the academy's elevation, it was probably raised out of the lake during the war with the Golden Order for strategic purposes. This likely brought some of the lakebed crabs up with it, explaining why they're in the courtyard.
So fascinating! My mind went to a combination of both interpretations: the mages, aware of the adaptive abilities of the crabs, created crab homunculi specifically to cultivate glintstone!
Just like Godwyn is right below the crabs with his appearance outside Leyndell, there is a giant mass of glintstone suspended below Raya Lucaria. Perhaps getting the glintstone crowns from the crystal crabs is less of a "drop" and more a recreation of the way the mages craft their crowns.
What I’m gathering is that crabs are obscenely powerful in Elden Ring and effectively they are all Empyrean level, able to adapt to any kind of outer god power, even Undeath. Praise crab 🦀 The true Elden Lord!
Remember that the Outer gods don't want to destroy the world, but remake it in their own image. Tainted order, horned wounds, unalloyed gold, bright moon, dark night, etc. The only thing they can agree on is that there can be no compromise.
Isn't there a crystal cave underneath Raya Lucaria? Could that mean that Raya Lucaria was built on top of a massive glintstone vein? If the crabs Are What They Eat then them foraging on the Raya Lucaria grounds could essentially be a relatively slow, potentially unintentional, mining operation.
Given the amount of glintstone we see in crystal tunnels that is either powerless or unstable, it's possible that it takes a LOT of glintstone for the scholars to preform their research. Besides, it may be somewhat risky to try and chip off bits of the giant natural formations we see: if the tiny unstable gems can cause harm, imagine what a giant unstable glintstone could do if tampered with.
With all this considered, the scholars very likely need a number of places to collect their glintstone from.
The academy is directly above Lake of Rot, but I'm not sure if there's a correlation.

now this is the lore i'm here for.
Crabs are forager in nature and considering Raya Lucaria has graveyards even in their entrance, it's not that far to assume they ate what the mages have concocted there. Just like what the video said, crabs inherit what they ate so there are poison crabs, deathblighted crabs, sleep crabs and crystal crabs. The only place where they couldn't adapt are in areas with Scarlet Rot. Those areas are with different crustaceans specifically the Kindred of Rot.

About crystal crabs: we already know that there are glintstone mines and deposits beneath Ray Lucaria, because of the dungeons in the cliff it is built in (the dungeon with the onyx lord and the elevator to top of Raya Lucaria and terra magicka) so it makes sense that foraging there might lead to crabs getting crystals on them similar to the Godwyn crabs. As to why these and the ones at snowfields have sleep: we can't know, because the sleep quest and lore was deleted from the game mid development.
Edit: should clarify, this is a watsonian line of reasoning; we already have the doylist line of reasoning in zullie's video
The Raya Lucario crabs could also be a matter of animal testing; i.e., you demonstrate the feasibility of your hypothesis on a "lesser" being (e.g., an animal) to justify experimentation on a "higher" being.
So it could be that the crabs, which may have been known for their adaptability if they were known to have Godwyn's face, were chosen for Albinauric experiments, and the success of those proved people were possible.
Idea: count the spawns of all the soldier and knight type enemies to find which faction had the most forces
My guess is that yes, they did indeed created those in raya lucaria but they are also farming them, making them eat glinstones so that the crabs adapt and start evolving into glinstone crabs to therefore have an unlimited source of glinstone, and maybe that expirement failed and led to the albinaurics? could be a thing idk.

I mean they are surrounded by local crab lakes, we know they're good eats (thanks Boggart), and they have to serve the students something, right? The official Future Press guide literally calls them "Albinauric Crabs", so there's not much discussion about whether they are real or not (page 232 in the list of notable enemies for Raya Lucaria).
If you open the map at Raya Lucaria, then switch to underground viewing, you’ll see it’s on top of the lake of rot.
The entire ceiling of the lake is covered in massive glintstone obelisks. The crabs are feasting on the waters above, as with the Miranda flowers.

The manequins also support this. The idea that they may have been working on constructs to defend while they studied keeping them from having to distract from their pursuit of knowledge is very on par for sorcerers, wizards and the like. There are examples of multiple generations within the academy and the lands surrounding it.
There is also Selivis and Ranni to consider. Both being connected/obsessed with puppets and dolls, and both also connected the the academy's past.
Edit: there is also the presence of the silver ball rolling down the stairs, which may be conjured in this instance, but does tie back to the balls and mimics in Nokstella, which are another further generation/byproduct of the albenauric creation. And again ties back to Ranni.

All things become crab. Crab is love. Crab is life. Crabs are awesome.
In all seriousness they are peak evolution. They can survive at insane depths, and then be pulled to the surface above water, and take in air. Crabs are literally some of the only animals that can do that, and not die. Crabs can swim hella fast in actuality. They can burrow. Some are entirely amphibious. On 8 separate occasions, a species evolved into crabs. Coconut crabs, are not actually crabs, but they are evolving into crabs, right before our eyes. Only fitting that the academics would deduce that they should just make the third iteration of Albinaurics into crabs, because crabs are a species that have withstood the test of time.
Even if the crabs were reused from DS3 I still love these crabs especially since we didn't get much of them in DS3 but I'm happy that there's alot of them in Elden Ring now and there also improved graphically compared to DS3. I was intrigued but these white crabs and why they were up there and I guess now we know but still why would they want crabs? Also why are they able to produce something that'll make you sleep? Thanks for this vid Zullie.
If you sneak up on the crab in the academy you can see it is eating Trina's Lilies. The other sleep crabs in the swamp are also around Lilies.

Lucaria also seems to have flooded at some point, or for the water level to have risen. Roads, buildings, and ruins alike in the lowlands around the university are all surrounded by water, but clearly weren't designed that that in mind. Many of the buildings also appear to be sinking, with their foundations now over-saturated and unstable.
The creation of the crabs may also have been to adapt to the changing swampy environment around the university - at least as a stop-gap measure, since they're clearly not the bulk of Raya Lucaria's forces.
They could also have existed prior to the flooding, perhaps for the glintstone work, or as a side project as 'pets', in the upper gardens of the university. They seem a little out-of-place up there, almost ornamental.

I've noticed that Trina's Lilies tend to grow in the areas you find Sleep Crabs, so I just assumed they got Sleep breath from eating them.
I love that so many of the attempted usurpations of the Golden Order are silver/quicksilver. Between the moon, the mimic tear, and the albinaurics, it's interesting to see where "silver" shows up (and interesting to see the dimension the alchemy brings to it as well).

I really want this to be a reference to converging evolution of crabs and how each generation of albinurics is trying to improve and evolve them, and crabs are to evolution, what brown is to colours... The likely result of overzealous mindless experimentation

It all kind of ties together: silver-blooded, artificial albinaurics are tied to the cut out dream quest and St. Trina; silver-shelled crabs in Raya Lucaria breathe sleeping mist, both possibly created from one another.
As for the crystals, if the crabs really do adapt to their environments (as deathcrabs show with Godwyn), mages might have developed crystal crabs to grow homemade glintstone from an ambient magic in Raya Lucaria instead of running all way down to crystal tunnels and mines.

The crabs found in the snowfield conjure the incredibly blessed mental image of Albinaurics making the pilgrimage to the Haligtree with their little pet crabs.
I would say that they would make a great way to absorb glintstone and process it into larger pieces. You make albinauric crabs, let them loose, they filter glintstone particles out of the environment, grow it into large crystals, then you harvest the crabs to get large glintstone crystals. They're glintstone accumulating detrivores.

I tend to buy more into the side-effects hypothesis - as with the godwyn crabs - likely the grounds they foraged in may have had either a byproduct of albinauric creation, or some kind of essence left behind by the presence of albinaurics - which may make sense with the first generation albinaurics having disappearing legs - maybe this process leaves something behind?
Alternatively, the crabs could have served as a sort of proof of concept, or ‘essay in the craft’ of albinauric creation - either a stepping stone for raya lucaria scholars to practice albinauric creation, or being the result of a kind of testing stage when albinaurics were first created.
