broccoli tortillas (paleo and gluten-free)

- Today we're going to make some delicious tortillas from broccoli. Yep, broccoli, eggs, and salt are the only ingredients. FULL RECIPE BELOW. These fabulous shells are conveniently gluten-free, dairy-fre, and paleo. Enjoy another green recipe before March 17th ;)

broccoli tortillas
gluten, dairy, corn, and soy-free + paleo!
ingredients:
1 head broccoli, cut into medium-sized florets
2 eggs
large pinch sea salt
method:
1. Pre-heat oven to 385 degrees Fahrenheit. Pulverize your broccoli in a food processor or blender until it resembles fine granules of sand. Transfer to mixing bowl.
2. Add 1-2 eggs, normally two if your broccoli isn't tiny, until mixture obtains a just-moist, homogenous texture. Add a large pinch sea salt.
3. Line a baking sheet with a silpat or parchment paper or lightly grease it, spoon 1/4 cup batter onto it. Flatten into desired size and thickness of tortilla. Repeat with rest of dough. Bake for about 12-15 minutes, until edges are brown and the tortilla holds solid.
4. Fill with filling and serve with some guacamole for something extra green!

Bubble Child I think it best to hold dough overnight and cook later if someone wanted to speed up the process. The tortilla held ok, but worked best (folding) fresh. Thanks for all your great ideas, K

I made these tonight! I was pleasantly surprised by how good they taste. I made mini pizza type things with hummus and tomatoes and basil as toppings. So yummy! I could have pulverized them a bit better but that was my blenders fault! lol I really want to try the quinoa sushi rolls next!
+Mariela That sounds awesome!! haha and yeah it's funny how it still works even if there are broccoli chunks still there. Glad you like them and let me know how the quinoa sushi goes! Make sure that you add enough water to the quinoa when you cook it so that it's not dry. :)

i love the way this taste.. i made it but only made 2 successful tortillas shells because mine constantly stuck to the pan. what do i use so i can pull the tortillas off the pan without sticking?
Glad you like the recipe! And I'm sorry you had several lost soldiers in there. If you use parchment paper or a silpat, it works well to keep them from sticking. Otherwise, make sure you grease your pan lightly with non-stick cooking spray or olive oil. Hope it helps!
