We've been doing it for a long time. It's a great treat! You'll love it. We started with wood chips and charcoal, and that was much harder to control. This is really straight forward. Good luck, during summer and in the south, do it early am. I've used ice cubes under the cheese in July, it helps but it gets pretty melty.
