      Hi Chef Sally- yes I was- Chef David is very smart....even though this isn’t the traditional technique of wet brine with coffee etc- Chef David was smart in using this technique for his traditional dish. I hope you are keeping warm up there.

    Korean street food at its best indeed! We don't just get amazing recipes from your channel, we also learn alot. The process of osmosis did a really great job in here.

    I love this recipe, the pulled pork definitely needs sugar!!! Such an awesome explanation on the sciences behind osmosis and why to use salt and acid. As a mom love the simplicity of buying products like those buns.
    This is a amazing recipe! Love the edit and the shots.
    Also I never tried to peel the ginger with a spoon.

      Hi- well you can do this technique on other large formats meats of pork isn’t on you table. You can do it with a small chicken breast just less salt of course - and let it sit for 1/2- 1 hour-

      Hey hi.....glad to see you thanks.....it's one of the best ways to make it fool proof....is that technique. You can do it on a chicken breast with just a little salt and let it sit for 15 -30 minutes and the same thing will happen to the protein strands.

    Oh Chef Alexis this Bo Ssam Korean Pork is stunning and I would love to try it. I've never actually had Bao Buns but there is an Asian Store close by I think I'll get some and try this dish it looks so delicious with the carrot and cucumber and most especially the Ginger Scallion Sauce and the Ssam Sauce. Incredible coking my friend as well as lots of valuable information about Osmosis, diffusion and the Mallard Reaction. Brilliant video thank you for sharing Chef.       Sonia- thanks for noticing my effort on the story telling.
      yea the bao buns come frozen and then you just steam them...really easy and you can fill them with what ever you want.....They are what tortillas are to Mexican street food. You can make them too....much better and pillowy if you make them but you know me, I like help from the store whenever I can.

    Whoa!! The pork looks absolutely amazing! I love how the brown sugar in the rub coupled with the marinating time helps creates the perfect crust when roasting. I had these a few times before and absolutely love the versatility of the ingredients and the protein variations.
