  • RECIPE FOR PANDAN SERABI IN KINCA SAUCE
    Material :
    150 gr wheat flour
    50 gr rice flour
    2 tbsp granulated sugar
    1/2 tsp yeast
    1 tsp baking powder
    65 ml coconut milk
    1 egg
    200 ml water
    1/4 tsp padan paste
    (let the dough rest for 45 minutes)
    kinca sauce:
    65 ml coconut milk
    135 ml water
    100 gr brown sugar
    1/4 tsp salt
    2 pandan leaves
    enough cornstarch solution
    how to make :
    1. Add the flour, rice flour, granulated sugar, yeast and baking powder, stir all the dry ingredients until smooth.
    2. Add the coconut milk and eggs, stir again while pouring in the water little by little until it forms a liquid dough
    3. Add a little pandan paste and stir again
    4. Cover and let the dough rest for 45 minutes
    5. While waiting, we will make kinca sauce
    6. Prepare a pan, pour water, coconut milk, brown sugar, a pinch of salt and pandan leaves, stir all the ingredients until mixed and cook the palm oil until it boils.
    7. Pour in the cornstarch solution and cook until it thickens slightly. Let it cool
    8. Stir the pancake mixture that has been left to rest
    9. Heat the Teflon and take 1 scoop of pancake dough, cook until the pancake is nested, do this until the pancake dough is finished
    10. Serve the serabi with a splash of kinca sauce.
