Traditiionally, porridge would be made in a double boiler as, on the stove, it might burn easily. Use one mug of oats to three of milk, and a pinch of salt. That is best left in the pan overnight, and cooked for breakfast the next morning. However, you can cook this straight away. Bring to boil on a medium heat, stirring all the time. Turn the heat down low and simmer for 20 minutes. At this point, some Scots would sprinkle salt on it and eat it. Many would use water, not milk. Most enjoy it on the sweet side. So, you can add, cream, golden syrup, soft brown sugar, castor sugar, maple syrup, to taste. My choice is soft brown sugar and cream. One time, my Canadian Aunt served it with buttered toast on the side. SInce then, I have always eaten it like that. You can microwave it: Same proportions in a glass or plastic bowl, of a size that the contents only half fills the bowl. But you still need time for the oats and liquid to turn into porridge. So, half-heat for 10 minutes to start with. Stir and repeat if necessary to create a smooth and creamy consistency. This breakfast is for enjoying, and lingering over. It has no place in your life if you are rushing round in small circles, getting the kids off to school. Leave it for the weekend! If you are counting calories, forget it!! Pure oats do not contain gluten. But, in factory processes, cross contamination can occur, albeit minimally.
