I've been baking bread for many, many years. I will say it like this. You are braver than I am. No way would I keep resetting my scale and dumping ingredients in. I always measure things out in a container before I add it. If you dump it in, most of the time there is no going back. I strongly advise your viewers to do what I do. Other than that I'd say you did a great job. 😀
Just discovered your channel. I am French so it is pronounced the first way you said it. Lamé is the second way you pronounced it and that is incorrect. Lovely bread and interesting because I have generally seen sandwich breads being baked the same day. I will definitely try it! Cheers!
Now that I’ve made your pizza crust (made it twice so far), I can’t wait to make your bread! My starter is 100% hydration … I’ll do some research on your starter before I make this bread to see if yours is also 100%. You give me hope that I can do this.
The crumb looks great and I am going to try your folding technique. I've never baked bread in a loaf pan before (always used cast iron dutch oven) but the results look so good!
I like the loaf because I make a lot of sandwiches out of it and it’s just easier to slice this way for me. The cast iron Dutch oven works great too! 😊
I'm glad to see someone bake it in a loaf pan instead of Dutch Oven. More practical for toast and sandwiches. It is one of the oldest breads coming to us from ancient Egypt. I've baked bread but never tried making sourdough. Usually bought it but I may give this a go. Funny story about dough and drains.

After many loaves this is th changes I use to make 80% of my loaves. I use canola (more neutral flavor) and Bob's Artisan flour with tad more water because of the higher protein. I use the 2 loafpan method with all metal binder clips at each end. Oven spring is 2x, yes it goes to the top of the second pan. It ends up squarish like sandwich bread. It is FANTASTIC all purpose bread.

Hi, Sam! I am a newbie at this and only watched my brother once. He suggested that I get a cast iron bread/loaf pan which I did. Can I use the cast iron just like you did a regular loaf pan by covering with saran wrap and putting it into the fridge? Will it still bake the same? Thank you for your recipes and videos!!! They ARE SO HELPFUL!!! I also love that you don't throw your discard away! ❤
It should work just fine in a cast iron bread pan. The only thing that would change is your bake time. It will likely need slightly less time in the oven so just keep an eye on it. :)
Also want to ask you if you have any side dish video for summer time / 4th of July recipes???? I ise your Thanksgiving green bean casserole recipe and it's a hit!!!
HI Sam maybe you have some advice.I started a starter 6 days ago. I did it at 1pm so now I'm feeding every 12 hrs. So it"'s 1pm & 1am. Is there something I can change without ruining them. I have 2 startets going.. Can I combine the both once they are at baking Level. Thank you so much.
Please help! I am determined to make this bread and pizza dough. I cannot get me starter to double. I live in south FLorida. The temperature in my home is between 78-82 degrees. I have just taken the bread out of the oven and it does not rise, what am doing wrong?
OMG, I have some wheat flour I need to use, Im going to start a sourdough starter, again. It's been a long time since I've taken care of a starter, really quite a daily task, but it was so worth it, the bread tasted amazing. It was me being sooo lazy and forgot to feed it, and eventually it was no longer good to use, stinky and gross if not kept up. But yeah, why pay for yeast when it's free and all around you, just need to capture those guys in the jar again. I'm on the sourdough starter bandwagon again, thanks to your post!💖

I find it is definitely not too sour if you follow the instructions I have here. I have even left it sit even longer without issue, although I don't recommend doing that. :)
Love the recipe ❤ I found that my bottom wasn't quite so dark, by putting a pizza stone on the rack underneath where you place your covered sourdough bread. Changes the bottom totally! I just leave that pizza stone in the oven, I make it every week 🎉

It should work just fine in a cast iron bread pan. The only thing that would change is your bake time. It will likely need slightly less time in the oven so just keep an eye on it. :)

You need to be able to cover it for best results. I’m not sure if your Dutch oven will work unless it’s really deep.
Can you add jalapeño and cheddar cheese in it?

Sounds like your heat may have been too high when cooking the caramel 🙁
