    How to prepare potato boats stuffed with meat with red sauce in the oven in an easy and quick way.
    7 sweet potatoes
    500 grams of minced meat
    4 tablespoons of olive oil
    1 onion (large)
    1 tomato (large)
    1 sweet pepper
    3 garlic cloves
    1 teaspoon tomato paste
    A quarter of a bunch of parsley
    1 teaspoon of (paprika - cumin)
    Salt / black pepper
    The sauce:
    1 tablespoon of tomato sauce
    A cup of water or a cup and a half
    1) Wash the potato well, then remove the outer skin, cut it in half lengthwise if the grain is large, but if it is small, use it whole, scoop out the potato pulp using a small spoon.
    * Attention must be paid when unloading the grains of potatoes that they are all the same thickness.
    * Do not get rid of the potato pulp. You can roast it with onions and use it as a filling, or boil it until it is tender, then mix it with a blender to soften it, and add salt and two health.
    * Potatoes are placed in water so that they do not change color.
    2) Fry potatoes in hot oil on both sides after draining them of water.
    *You can roast them in the oven instead of frying them (the potatoes are brushed with a little oil on all directions, then placed in a preheated oven at 200 degrees for 15 minutes, so that they turn light brown).
    3) After the potatoes have acquired a color, they are placed in a baking tray.
    4) To prepare the filling: In a hot frying pan, add the minced meat, stir from time to time until the liquids in it come out, then add olive oil, then finely chopped onion and fry until it turns pink, then add the diced bell pepper, mashed garlic and tomato paste, stir well and leave for a few seconds, Then add the tomatoes cut into cubes with the outer skin removed, add the spices, and leave for another 6-7 minutes, then remove from the heat, let it cool slightly, then add the finely chopped parsley.
    5) Add a pinch of salt to the fried potatoes, then add the meat filling, decorate with cherry tomatoes or tomato slices, you can add slices of hot green pepper.
    6) The liquid mixture: mix the water with the tomato paste, a pinch of salt and black pepper, then add the bottoms of the potato tray.
    7) Cover the tray with parchment paper, then with tin foil, and place in a preheated oven at 190 degrees Celsius for 30 minutes, then remove the parchment paper and tin foil, and leave for another 10 minutes to brown.
    Serve alongside rice with vermicelli (Lebanese rice).
