I think the major differnce between them is how they behaved cruelly towards the ones they promised to protect. Snape wanted to protect Harry, knew that his unfair and hateful behavior towards Harry made him suffer, yet couldn´t help himself not to see the despised James in him. Whereas Itachi wanted to protect Sasuke, knew that his behavior towards Sasuke made him suffer, and behaved this way anyway since he wanted Sasuke to become the next hero and protector of the Leaf. Yet he didn´ t see what who Sasuke would really become and how vengeance would corrupt him.
You know it!!! I found this video because I just made the snape and itachi comparison in my head so I searched up snape vs itachi. Now that I’m thinking it over I realize itachi would destroy snape
They are really similar but I personally think Snape gives more vibes of this was planned from the beginning whilst Itachi kinda feels like a retcon. I just wish Itachi had a little better foreshadowing (also I think when Itachi and Sasuke release the edo tensei and Sasuke sees Itachi's story we shoukd have seen his inner dialogue when he and Kisame invaded the leaf)
