      Definitely- one of the reasons I think his channel did so well-his “recipes” aren’t refined or even the most properly done, but they are realistic for the typical person who needs to put a meal together at home.

      Yep. There’s a HUGE value in being able to know when to say “stop here. There is more if you spent more time, but it’s not worth the return on investment anymore.”
      Adam’s recipes totally get that.

      I lived there for a few years in the 60’s and 70’s it was the Mojave Desert of food ingredients. And because the inhabitants were subsistence farmers there was not a lot if restaurants besides breakfast venues. It’s gotten better but with online ordering in now makes things easier there.

      Absolutely! His other videos have actual scripts so it's easy for him to add subs (he's mentioned that before), but the q&a it has to be all typed. I believe his assistant does it though! Still very thoughtful.

      UA-cam auto generates pretty accurate subtitles, you can redact said subtitles quit easily within the UA-cam creator studio.

    What a lot of "how-to" youtubers forget is that there is rewind option readily available for a viewer who did not catch some instruction the first time around, so they pace the video like its a TV show. Brisk tempo and straight-to-the-pointness of yours videos is much appreciated!

      I haven't made Adam's bolognese specifically, but I have watched it so many times that I use a lot of his techniques. My gf told me that it was better than her mum's bolognese. Safe to say that if I want to stay in her good books that will stay between my girlfriend and myself aha.

      Chicken liver included ? I made his recipe a couple of times but never got my hand on some chicken liver. It's still very good without. I used to do it without carrots, balsamic vinegar and white wine, and it wasn't as good !

      Yeah nice scenery but probably most importantly, it's the south so your dollar goes a lot further in terms of housing. It's crazy how much more affordable it is to live in southeast America compared to the mid/north Atlantic coast.

      @@kg7219 Many people agree with you on that, but states like California have had population exoduses up to 300k a year in recent times, while southern states like Florida and Texas have gained a large amount of population. I personally have lived in the northeast and the south and what most people fail to understand is the cultural difference between the south and north.     As a lifelong Tennessean myself, I too would ask in a slightly condescending but also curious tone: "Why Tennessee?" I'm only here because for most of my life I couldn't leave it for financial reasons--and now that I am able to live wherever I want, ironically, I have too many attachments to some people here that I can't bring myself to leave them. But I suppose that makes our reasons for being here somewhat the same, then.

      I was born and raised in East Tennessee and I’ve lived out of it for 6 years or so for college and travel. All my wife and I want to do I find a way to move back (she’s not from TN). It’s so green, the people are kind, there’s tons to do, you’re never 5 mins away from a good hike, no income tax, never far from a river, awesome heritage. I think there’s so much to love about it.

      According to the location tag, he is in Knoxville, which is the one city in TN that I would consider moving. Similarly, I live in Huntsville, AL, which is the only city in AL that I would ever live in. The south has a few nice cities to live in, but not many.

      @@chickenfishhybrid44 yes, i agree and i think theyre often kind of right and kind of wrong to feel that way. im from a midsized city in the midwest and i moved to europe for college partly bc i thought i hated my city and region and stuff. now that i've lived in germany for a few years, i hate that city even more in some ways than i even had the context to, but i've also grown an appreciation for other elements of it that i also never would have had the context to. that said, ive still rlly only lived in two places for long, im sure there are things i still don't understand that are nice and bad about both of these places.

    As someone living in an arguably collapsing mid-Michigan manufacturing town, I agree that the world is full of places to live. We don't have the fastest internet, we don't have 25 kinds of cuisine right on one road, and world famous stuff isn't all from the same metropolitan area. But rush hour is literally an hour, you don't wait more than an hour for any but the newest 2 restaurants in town, public events *always* have somebody you recognize.
    There's much to love about smaller towns, and you don't have to be in the absolutely sticks to have lower property prices and bigger parcels to live on.

    I love the fact that you show your wife respect and affection, and she returns you the same. I'm sure your marriage isn't wonderful every moment of every day, but it is nice to see two people be genuine and nice to each other.     Moving from NY to TN, almost 17 years ago, was probably one of the best decisions I've ever made. And I've had people from back home ask the exact same question, with similar emphasis. Funny how those who visit, especially East TN, go home with very different opinions.

      I spend more Tennessee than I care to, as a truck driver. Yes, it’s pretty. Driving through the hills/mountains in a loaded truck is less than fun. The people there remind me WAY too much of Texans. (I live in Texas, as a former Michigander and former Californian, and not a fan of Texas, either)

    Speaking as someone in Kansas City who has considered moves to Fargo and other smallish places, I wholeheartedly agree: we need to have more than like five cities people move to. Don't get me wrong, I'd love to spend some time living in NYC, but also there's no way I could possibly afford that.

    When I moved from NYC to Raleigh, people asked me in the same condescending way "why north carolina," and it was the same reasons for me. Cheaper, I found work there, and it's closer to all of my family.

      I live in South Florida, and man, the COL here is terrible. Even when splitting rent with my gf, an entire paycheck goes to rent and utilities alone. The other paycheck goes to food, student loans, and other things. Whatever is left is saved but it really isn't all that much.
      Then we went on a trip to Kentucky and man, everything was so much cheaper. Food, entertainment, transportation, etc. My income that I make at home is pretty much what a dual income family makes on average in that state, so my gf and I lived a pretty good week during that trip without really hurting the bank. Now I will personally never move there due to certain social issues my gf and I experienced (we're Hispanic and boy did random people make that apparent on our behalf) but at times it makes me wonder "What if..."

    As someone who works in Tech, and has a tendency to idle at around 60 hrs a week:
    My work schedule is unhealthy, it should not be aspirational, and it definitely shouldn't be used to shame anyone who manages to avoid it.
    Even 40 hrs a week is pushing it for some jobs, tbh 🤷

      40 hours i think is the max horus pare weak a human should work. Research show that hunter gathers can ate MAX work 40 a weak whit out ruining their inverioment and leaving there village unprotected. Thats the max so the avrge should be around high 20 low 30s.

    You've quickly become one of my favourite food UA-camrs, and I watch a bunch of them. I love a lot of channels for a lot of different reasons, but your approach of "I'm a home cook making dinner for 4 after working 8 hours and leaving myself time to get Bobby to soccer practice, not a Michelin-starred chef preparing meals for the dinner rush" is greatly appreciated, and has been a revelation for me.
    This was my first FAQ video, and I really appreciate learning more about you and your lifestyle; it's definitely relatable. I wish the Ragusea family(and any and all reading this) a fortunate 2022, and keep doing what you're doing!

As someone who loves music dearly I found your story about the Vox Mariah Carey Debacle to be very inspiring and enlightening (I watch it occasionally) and overall I seem to understand that you really love music so why not engage with that! Go 2 Adams! Or maybe you could have the Beato family over for dinner and a jam session. Anyway, I think there are lots of people who'd love this kind of stuff.

    You have *actually* impacted the way I approach cooking. Having never really cooked with my parents, I had to learn by myself via the internet, and, being a perfectionist, I became super anal about everything, to the point that it could ruin the whole experience if something went ”wrong”. I think a component that had been missing in the cooking videos I watched was precisely the emphasis you put on ”cooking in the real world, for real people”, measuring by eye and tasting to adjust. And that sometimes things go wrong, and that’s fine; it can still be a delicious meal.

    Holy Land Market is AWESOME! My wife and I love that place, we usually go there once a week for the Turkish coffee, food, packaged snacks, and rare Middle Eastern delicacies. For foodies it's definitely in the top 10 places to visit in Knoxville, and the owners are a trip! They're awesome people.

    Adam,
    I have the same range you put in the kitchen remodel (although the induction model) and I 100% agree it does not get hot.
    I think it’s because the door is thin to get more space so it can’t get as hot as it’s losing too much heat. It can’t even self clean normally. It has a steam clean which is complete garbage.
    The induction is amazing but I agree with you on the oven itself. I can deal with it but when I remodel my kitchen I am going to get a better oven.

    As a fellow Knoxvillian, i would recommend la herradura if you're in the mood for some great tacos(especially the lengua, I'd kill for a lengua recipe video) and yassin's falafel is a wonderful place run by a wonderful man.

      i don’t know how they cook it over there but the traditional mexican way to cook it is to just put a bunch o salt and whole garlic cloves on boiling water and then you just leave the tongue in there for like 4 hours until it’s really soft. You take off the membrane on top of the meat and chop it up, and that’s it. If you know how to speak spanish or even if you don’t i think you could still understand some recipes from a channel called “La capital”

      “As a fellow Knoxvillian” I have to recommend Mexican and middle eastern cuisine because, you know the good ol southern cuisine and BBQ traditional cuisine it’s too far away. Come on if that’s the best you can get there , then why not just live in North Dakota at least nobody can ask for any traditional cuisine there.

    I'd love to move to east Tennessee some day, but the job determines where I move to and I like my job. I do at least get some freedom of about a 100 mile radius and don't have to live in cities. They're stressful, crowded, and expensive to live in. I find areas just outside the suburbs, right where rural areas begin to be the nicest places to live. Close enough to a city for anything special, and a short drive into suburbia for anything you need, but inexpensive living and friendly neighbors.
    Love your channel Adam. I hope it continues to grow even bigger in 2022.

    18:30: Yes to all of that. When work is less rewarding, like working at a convince store, it's just harder to push yourself.
    As a creator myself, I find much, much more enjoyment and reward in making crappy ytps, even though it doesn't generate enough money in the first place.
    Point is, I could never work 80 hours a week cleaning crap off of toilets.

    19:00 the “I work lots is make better money “ thing gets right up my news. I was raised by a corporate lawyer, who lionised long hours as a mark of hard work. Yet very time time in motion or similar studies are done, they find that better work is some in fewer hours, when employees are less tired.

    HOLY LAND CAFE!!!!!!!!! I swear on my life I was thinking about this gem when you started talking about being able to get anything in more populated areas. My wife and I used to go on dates here back when we were dating. She used to live in some (not so great at the time) apartments down the road from there. We were students at UTK at the time.

    to the Tennessee person, you live in Knoxville. It's easily one of the best places in the state and for a college town it's very full of life and action. Not all of Tennessee is poor and pitiful, that's an awful stereotype because we're actually very developed compared to other places I've seen. Not just the recipes and actual video content but also what comes through from you as a person. This video in particular has been one of my favorites.     Man, I really needed that 'If you're struggling with your pizza' disclamer. Our new tiny apartment has an oven has just ruined my long time pizza resipe, and I have been pulling my hair out trying to figure out whats wrong all of a sudden. I knew it was the oven but I've been sure it couldn't JUST be the oven.

    Discovering your channel was a gateway for me to take cooking more seriously. Back at the onset of the pandemic, it was the best distraction from everything going on for my wife and I. It was so strange that shortly after we decided to move home (Southeastern KY) you announced you were moving to East TN! The guy who got us into serious cooking was moving just a stones throw away from where we were moving at almost the same time. All that to say, I so understand what you're saying about people asking you why you're moving to the Appalachians. People have this idea about it they feel is very concrete, despite having never been there. It's such a beautiful part of the country with beautiful people, your explorations into Maryville and Knoxville proof of that!
    My grandparents lived in Madisonville, so we spent a lot of time driving through Knoxville and going to Maryville, and you've shown me a side of Maryville that I didn't even know existed! I think you're doing a great service to showing a side of Appalachia that a lot of people don't get to, or care to, see. Thank you, Adam!

    Thanks for the tip on vhino verde. I had never heard of it but I went and got two different vintners offerings from my local grocery store (the total for both bottles was US$16.) My wife likes white moscato so I had high hopes for these. After small samples, we both decided this wine is a keeper. Have a good new year.

    Two oven thoughts:
    Our GE goes to 11, er, um, 550... but since we meter it for the purpose of cooking a standing rib roast with the "let it coast" theory of finishing, we know that it's *really* hard to get it past 500, even set to 550, no matter how long you're willing to wait.
    On the "True convection" front, I would assume that means that it does not heat the elements in the oven for radiative heating, it *only* heats the moving air.

    I just moved from WA/ID to middle TN in October for the same reasons you talked about. I’m loving it here, the pace of life is much more relaxed, and you can actually afford to buy a house here with a normal career.

    For making pizza in a poor-quality oven, I've gotten good results with a cast-iron pan. Basically, the stovetop can easily get hotter than the actual oven, so you can crisp up the bottom on a burner, then move the pan to the oven to cook it properly. (Or possibly vice versa? Maybe finish under the broiler to brown the cheese? I haven't done this a lot.)

    I did a quick google and "true convection" has a heating element in the fan, sort of like my electric heaters I use to heat the room. Allegedly, this allows for even more efficient, even heating that circulating the air heated by the conventional bottom element. Not sure why, but I guess your results put paid to that claim.

You get amazing houses and land for your money.     Welcome to TN! I moved here from the Midwest and really like it here. Dove in to some of the local history and made a few videos about such. One fun fact...the father of Oliver Hardy was in Knoxville during the siege of the town during the Civil War. Fort Dickerson has an interesting story as well...including the life of Jonathan Calvin Dickerson whom the fort is named after. Every place has history...both good and bad. Cheers!

    What I noticed quickly is Adam's respect to places that otherwise might be overlooked if not dismissed in terms of places to live and have a career. There is beauty, excitement (?) and good food to be found in places that aren't named LA, SF, NYC, Chicago, DC, Boston or Philly. You just have to look, give it a try and take it as it is.

    I’m a Tennessee native (Nashville area) and I’d recommend East Tennessee for someone who is thinking of moving to the South but doesn’t want the full intensity of Southern life. Not to say that East Tennessee isn’t Southern, it very much is. I’m simply saying there’s much more to it than being Southern, unlike some other states. Lakes and rivers galore, amazing hills and valleys, all four seasons (and you get less Tornadoes in the Spring); I mean it’s just great. Chattanooga is very outdoor-activity focused -I could go on.

    The convnience store workers standing up for hours was the subject of a bill in my Mediterranean country (which i shall not name to avoid a flame war) it culminated in the cashier's act, basically not providing seating in jobs where otherwise you would be standing up all day is a the equivalent of a federal crime her

    About the first question...
    I get it ALL the time. When I inform someone I am from southern California, they look at me wierd and say something along the lines of "Why did you move to the south, especially to a military/college town?" (I live in Pensacola, Florida.)
    It's become a reflex to basically just go "Cost of living, plain and simple." as a short response, and then I'll say "Military personell come and go, and so do college stusents. Due to that, permanent residents-wise the city doesn't have many people, so the cost of living is cheaper." if asked to elaborate (usually only older folks ask).
    Wasn't always that simple though. Been here for almost 7 years, and in the very beginning, it use to be SUPER annoying.

    Adam, pure convection uses only a heating element outside the oven chamber (in back of it) and blows that hot air into the oven. Convection bake uses the bottom heating element in the oven chamber and blows the air around.

    OMG! I so understand this. When my wife and I announced we were moving from the Seattle area to St. Louis we received a resounding, "Why?" from nearly everyone.
    For us it is simple - economics. We cannot afford to remain in this area, despite having been lifetime residents of the PNW. St. Louis is cheaper to live in and is still a city. It is also not the rest of Missouri. And, the real kicker is, I have family there. Family that both my wife and I would like to be nearer to.
    Who knows, I might actually be able to retire in that city.

      I recommend you look into claire saffitz (dessert person) on youtube. One thing i really like about her recipes is the balance. Because sugar is a means to accent something, not a means in itself. She has a tempered taste that i appreciate.

      @@akale2620 Good question, it's nothing like a pizza. They're very thin, crispy cookies that are light, semisweet and can come in a variety of flavors but vanilla, almond and anise are the most common. If you haven't had one, ask your Italian friends to make you some.
