Great question! Basically "Personal Brand vs Business Brand for Videographers". I NEED TO MAKE A VIDEO ABOUT THIS. But for now, the short answer is to ask yourself what your long term goals for you business will be. For example, are you building a business that can be sold someday without your name attached to it or is it more important to be known as the expert in your area and you don't care to ever sell the business?
I don't completely agree with restaurants being a great niche. The video would have to bring in a lot of customers for a good ROI. Yet if you do a video for a business like a flooring company, they would make their money back after a few customers. Just my opinion

Start a community news show and offer local businesses to advertise on your show as well creating their video ads.

That's a good point! I too rather go after businesses that have a higher price point and only need a few new customers per month to get ROI!
