It kinda depends, i guess. If you're familiar with Chivalry, it's sort of like a first person fighting game how you try to walk in and out and fool your opponent with the range and the specific attack you're doing. I bet you could do something similar and make a FP fighting game.
***** The old arcade Punch-Out is pretty much living proof. Sure, it's boxing instead of Shoryuken, but that just means you're playing Balrog or Dudley.

Hmm, I wonder if it's possible to make it actually follow where the character is looking. Say like when you get sweeped or something, You're character is on his back facing up, as opposed to this video where the camera is looking inside the character model and towards your opponent. Or another example, like when you Tatsu, you're view is fixed on the opponent. I get it's to not lose sight on who you're facing which would definitely help in this case. I get it'd totally be confusing and disorientating as all heck. But I don't know, I'd give this mod a shot if were kind of like that. Adds a certain kind of "realism" to it in my honest opinion.

This was just fixed on their body position, and pointed directly at the opponent at all times. Hence all the weird clipping. Could you do a version that's properly first-person, as in, through where their actual eyes are? So it'd spin around as they span around, look up down left and right as they do, etc.
Fov needs to be way wider too, at least 120 if not more, and the camera needs to track the character's pupils, not just their eyes.
Incidentally, Tekken in first person looks about the same, but surprisingly Mortal Kombat 11 has moves that look almost decent in first person. I think the trick is to render the head / face and body separately so that when the camera clips into the head it doesn't cause other parts to go invisible. Unfortunately the mk11 camera has a bad tendency to invert when the character is flipping or crouching, so it's not quite passable yet, but it's getting there. Spinning moves are surprisingly not very disorientating. The main thing that is missing, besides a camera that is specifically set up for first person view, is stereo sound effects for every move to compensate for the lack of proprioception.
