A few remarks though... First, always turn your disks upside down, because when you did cut them you pressed downwards, so to help the shells to rise evenly, we place them upside down on the baking plate. Second... And this is important, Never EVER brush egg wash on the edges of the pastry, when you glue your disks or they might not raise correctly !
@@TheSeasonedCook I do not say that pastry won't rise, but that egg wash dripping on the side will unbalance the rising, and the pastry might rise more on one side than the other, a bit like the leaning tower of Pisa... And this happens very often when you bake many... That is also why we always bake more than what is necessary ;-)
I would/could but I've also been getting away from certain preparations that have really tiny audiences. Especially preparations that are time consuming and require a lot of video minutes. Believe it or not the attention span for video watchers is 6 minutes or less and half of those are actually 3 minutes or less. There's also a whole slew of short puff pastry versions here on UA-cam that you may find suitable for your needs. Plus, on top of all of that I have more than 300 videos currently on my to-do list LOL !!! Sorry
