    Carbohydrates are polyhydroxy aldehydes and ketones or substances that hydrolyze to yield polyhydroxy aldehydes and ketones. Aldehydes (-CHO) and ketones ( = CO) constitute the major groups in carbohydrates.Carbohydrates are mainly divided into monosaccharides, disaccharides and polysaccharides. The commonly occurring monosaccharides includes glucose, fructose, galactose, ribose, etc. The two monosaccharides combine together to form disaccharides which include sucrose, lactose and maltose. Starch and cellulose fall into the category of polysaccharides, which consist of many monosaccharide residues.
    Principle of Tommers test:
    Carbohydrate with free carboxyl group or reducing sugar like glucose, fructose, lactose, maltose etc have the ability to reduce the alkaline solution of copper sulphate to form yellow to reddish brown precipitate of cuprous oxide of copper sulphate.
    Tommer's reagent preparation (Prepared fresh):
    5 % copper sulphate solution in water and and add equal volume of 5 % sodium hydroxide solution.
    Tommer's test
    To the 2 ml of tommers reagent add 3 ml of test sample of sugar solution and than boil for 2 min and cool. Formation of yellow or red ppt. indicate the presence of reducing sugar.
